It was in his laboratories that studies were carried out on the compatibility of various products.

Today, separate meals are not only not forgotten, but are also gaining increasing popularity. There are all objective reasons for this. After all, each type of food is processed for a given amount of time in a certain part of the digestive tract. For example, fruits are immediately in the small intestine, and meat is first processed in the stomach, and only then enters the small intestine. Violation of these intricate physiological rules and a combination of incompatible things can cause problems with the intestines and stomach.

Compatible and Incompatible Products

There is a generally accepted scheme for gradation and compatibility of products that will help you understand this complex issue:
  • 1st group: protein products. They are digested in an acidic environment. Protein foods include, for example, meat, fish, eggs, legumes, nuts, seeds, and eggplants.
  • 2nd group: live products. This interesting name belongs to food products that are not heat-treated. They contain enzymes to break down nutrients. These are greens, vegetables, fruits (except potatoes), berries, dry wine.
  • 3rd group: carbohydrates. They are digested in an alkaline environment. Carbohydrates include sugar, honey, jam, bread, potatoes.
Thus, products of the 1st and 2nd groups, as well as the 2nd and 3rd are compatible.


Never combine products like this

1. Proteins and carbohydrates

Nutritionists and doctors who share the basic tenets of separate nutrition do not recommend combining proteins and carbohydrates. The fact is that bread, cereals, potatoes, which belong to the second category, are digested in the gastrointestinal tract with the help of alkalis that are secreted by the salivary glands. But proteins, for example, cottage cheese, eggs, soy, meat, are digested in the small intestine with the help of acid, which is secreted by glands such as the pancreas.

From our school chemistry course we know that an acid neutralizes an alkali. In this context, this is not very good because the food will not be properly digested and rotting processes will begin. Therefore, you should forget about sandwiches with meat or cheese, eggs with porridge and potatoes with meat.

2. Protein and protein

As for the above-mentioned food products, it is best to choose vegetables and herbs as a side dish. For example, an excellent pairing for meat dishes would be lettuce, spinach, chard, cabbage, asparagus, zucchini, pumpkin, onions, radishes, and cucumbers. But the classic combination of tomatoes and cucumbers is best consumed as rarely as possible. This is due to the fact that cucumbers contain an enzyme called axobate oxidase, which destroys vitamin C contained in tomatoes.

Potato

Potatoes are one of the most popular products on the Russian table. You can prepare many delicious and tasty dishes from it, or you can simply fry this root vegetable in a large amount of oil. Tasty? Yes. But it’s not at all good for your figure and health.

Potatoes are healthiest when boiled and baked. Zucchini and white cabbage would be an excellent addition. Seasoning the potatoes with fresh herbs or fried onions is also a good option. But you should forget about meat in this context. This combination prevents the absorption of beneficial substances and elements contained in potatoes and meat separately.

If you are worried about extra centimeters on your waist, then you simply should not flavor your potatoes with oil. The root vegetable itself has a high glycemic index, so the pancreas produces more insulin to lower blood sugar levels. There is absolutely no need for extra effort here.

The food combination table was first developed by nutritionist Herbert Shelton. Moreover, the doctor recommended eating no more than three foods at a time (the ideal option is 1 product per meal).

Shelton's system of proper nutrition can be defined by several basic rules:

  1. Proteins are proteins. You cannot eat two (or more) concentrated proteins at the same time. For example: nuts and meat, cheese and eggs, eggs and meat, etc. The first rule of proper nutrition is one protein at a time, and to get enough variety of proteins you should consume them at different meals.
  2. Fats are proteins. Proteins should not be eaten with fats, for example: vegetable oil and eggs, nuts and cream, butter and cheese, etc. Fats suppress the action of the gastric glands and inhibit the release of enzymes for protein digestion. The second rule is that the less complex the food combination, the more efficient digestion is..
  3. Protein-acid. You cannot combine sour fruits with proteins, for example: citrus fruits, pineapples, tomatoes are not eaten with eggs, nuts, meat, cheese. Sour fruits interfere with the secretion of gastric juice required for the absorption of protein foods. The same applies to sour drinks and marinades; you cannot consume them with proteins: orange, pineapple, grapefruit and other juices, vinegar, lemon juice and other marinades. Hay combination table


American doctor William Hay introduced his own method of combining products. According to it, all food is divided into 3 classes: foods rich in carbohydrates, foods rich in proteins and neutral. The basis of the diet should include fruits, vegetables, herbs, which cause an alkaline reaction in the body - the share of such products should be four times higher than the share of other foods (alcohol, sweets, fish and meat dishes, citrus fruits, eggs, coffee).

You should not immediately try to remember all acceptable food combinations.
Write down (or remember) all the types of products that you personally usually eat or use in cooking. And it is within this list that you create your own compatibility “table”. If you find that some combinations were incompatible, modify those recipes or food combinations. As a result, you should end up with a menu that is not too different from your usual diet. In the future, it will be easy for you to add new components to it by checking the main table.

Group 1. Sweet fruits

Bananas, dates, persimmons, figs, all dried fruits.
They go perfectly with each other (bananas with figs), with semi-acidic fruits (persimmon with apple) and with fermented milk products (dates with curdled milk).
It is acceptable to combine with nuts, milk, moderately starchy and starchy vegetables, herbs and non-starchy vegetables.
When combined with all other products, they cause fermentation.
Note
All fruits are very healthy if consumed as an independent food. Fruits and fruit juices should not be consumed as dessert. It is better to drink juices half an hour - an hour before meals.

Group 2. Semi-acidic fruits

Apricots, mangoes, watermelons, melons, blueberries, blueberries;

Note

Group 3. Sour fruits

They go well with proteins (meat with cucumbers), fats (cabbage with butter), moderately starchy vegetables (tomatoes with zucchini), starches (bread with cucumbers), herbs (sweet peppers with dill and onions).
It is acceptable to combine with fruit.
Cannot be consumed with milk.
Group 5. Moderately starchy vegetables
Beets, turnips, rutabaga, carrots, seaweed, zucchini, eggplant, pumpkin, green peas.
They go well with starches (zucchini with bread), non-starchy vegetables (green peas with cucumber), fats (carrots with sour cream), and herbs.
It is acceptable to combine with fermented milk products (kefir with carrots), cheese, cottage cheese, nuts, seeds.
Compounds with proteins (eggplant with meat, green peas with eggs), sugars (pumpkin with jam), fruits (turnip with banana), and milk are harmful.
Group 6. Starchy foods
Wheat, rye, oats and products made from them; cereals; buckwheat, millet, pearl barley, rice; potatoes, chestnuts, etc.
Ideal with greens (bread and salad), non-starchy vegetables (potatoes and cabbage) and moderately starchy vegetables (porridge with pumpkin).
It is acceptable to combine different types of starches with each other (pasta with bread) and starchy foods with fats (porridge with butter). However, combinations of different starches are not recommended for people prone to obesity. When eating starchy foods with fats, it is advisable to also eat some greens or non-starchy vegetables.
With a big stretch, combinations with cheese, nuts, and seeds are allowed.
Combinations of starches with animal proteins are very harmful, incl. with milk (bread with potatoes, potatoes with fish), with sugars (porridge with sugar, bread with jam), with any fruit (potatoes with apple, bread with grapes).
Note
Mushrooms in any form, sauerkraut and other pickles (cucumbers, tomatoes, etc.) are well compatible with potatoes and not well with bread.

Group 7. Protein products

Meat, fish, eggs, cottage cheese, cheeses, milk, curdled milk, kefir, etc.; dry beans, beans and peas, nuts (except peanuts), sunflower and pumpkin seeds.
Ideally combined with greens (cheese with salad) and non-starchy vegetables (fish with cucumber).
Combinations with moderately starchy vegetables (meat and zucchini) are acceptable.
It is unacceptable to combine two types of proteins (meat with cheese), proteins with starchy foods (eggs with bread, meat with porridge), proteins with sugars (eggs with sugar), proteins with sweet fruits (fish with banana).
It is also undesirable to combine proteins with fats (meat with sour cream), with sour fruits and with semi-acidic fruits (egg with apple).
Exceptions. Fat cottage cheese, cheeses, nuts, and seeds can be combined with sour and semi-acidic fruits and berries (cottage cheese with apple).
Milk can be combined with sweet and semi-acidic fruits and berries (milk with figs).
Fermented milk products are compatible with sweet, semi-sweet and sour fruits (ryazhenka with banana, acidophilus with apricots, buttermilk with grapefruit).

Group 8. Greens

Sorrel, dandelion, nettle, plantain, onion, lettuce, coriander, radish. Horseradish, chicory, sage, acacia, rose petals, etc.
Can be combined with any food except milk.

Group 9. Fats

Butter and ghee, vegetable oils, lard and other animal fats, cream, sour cream.
Ideally combined with greens (salad with sour cream), non-starchy vegetables (cucumbers with cream) and moderately starchy vegetables (zucchini with butter).
Combinations with starches (bread and butter) are acceptable, but in this case it is advisable to also consume greens or non-starchy vegetables.
Compounds with animal proteins (eggs with sour cream), with fruits (apples with sour cream), with sugars (cream with sugar, confectionery) are harmful.

Group 10. Sahara

White and yellow sugar, honey, jam, syrups.
It is best consumed separately from other foods, an hour to an hour and a half before meals. When combined with proteins, starches and fats, sugars cause fermentation. That's why you can't eat desserts.
In principle, combinations of sugars with herbs and non-starchy vegetables are acceptable.
Note
Honey is an exception to the general rule. In moderation, it is compatible with all foods except animal foods.

What is separate nutrition?

The product compatibility table is the basis of the separate power supply system. It consists of sixteen lines - product categories that can be combined in different ways. Good compatibility is marked with a “+” sign, and bad compatibility with a “-” sign. The sign "0" means that such a combination is allowed.

1. Meat, poultry, fish

The first column is the most important, since it is here that it is easiest to violate product compatibility rules. The nature of the food determines the composition of the enzymes released for its processing. So, to digest meat you need the strongest juice; it is released in the first hour of digestion. For bread - after 3 hours, and for milk - in the last hour. In addition, the strength of the juice and its acidity, and, consequently, the activity of the stomach glands and the speed of digestion vary depending on the quality of the food. Animal proteins are the most difficult to digest food.

Meat, fish, poultry should be lean. When processing these foods, all external fat must be removed. For all types of meat, the combination with green and non-starchy vegetables is favorable, because... This combination neutralizes the harmful properties of animal proteins, helps them digest and remove excess cholesterol from the blood (calorizer). The combination of animal proteins with alcohol causes great harm, because... alcohol precipitates pepsin, which is necessary for the digestion of animal proteins. The combination of meat with related animal proteins, such as milk, eggs, cottage cheese, cheese... is negative, because each of them requires special digestive secretions and different processing times, so mixing them is not recommended. This is what the authors of the separate power supply system say, and this is precisely what finds tough.

2. Pulses (beans, peas, lentils)

Pulses are beans, beans, soybeans, peas, lentils, etc. These foods are complex carbohydrates, but contain large amounts of protein. And therefore they require a lot of attention when combined with other products. The compatibility of grain legumes with other products is explained by their dual nature. As starches, they go well with fats, especially easy-to-digest fats - vegetable oil and sour cream, and as a source of vegetable protein they are good with herbs and starchy vegetables. They cannot be excluded from the diet, as they are a source of vegetable protein rich in amino acids, vitamins and minerals.

3. Butter and cream

For their good absorption, you need an abundance of green and non-starchy vegetables, since they themselves contain a lot of fat, which is difficult for digestion. Logically, it is possible to combine butter and cheese, but from a dietary point of view, a large amount of fat in one meal is not advisable.

4. Sour cream
