For the holiday table, we usually prepare several different types of appetizers, set out meat, fish and vegetable plates, prepare two or three salads, one main hot dish and dessert, it can be a cake, mousse, jelly, soufflé. Pies are often baked, dumplings are molded and boiled. Alcoholic and non-alcoholic cocktails and spirits are also served.

We will need:

  • creamy curd cheese - 300 gr
  • cream 35% -50 ml
  • lightly salted salmon - 300 g
  • red caviar - for decoration
  • dill - bunch
  • salt, pepper - to taste

Preparation:

1. Profiteroles can be baked in advance, or you can purchase ready-made ones.

2. Creamy curd cheese can be used from Hohland or Almette brands. Beat cheese with cottage cheese. Add chopped dill, leave a little for decoration, salt and pepper to taste. Beat until smooth.

3. Cut off the tops of the profiteroles. Using a pastry bag, fill them with the mixture.

4. Thinly slice the salmon (salmon can also be used) and roll into a rose shape.

5. Garnish the appetizer with red fish, red caviar and herbs.

We will need:

  • black caviar - 0.5 cans
  • red caviar - 0.5 cans
  • large shells - 100-150 g

  • fresh champignons - 250 gr. (or other mushrooms)
  • onions - 2-3 pcs.
  • hard cheese - 150-200 gr.
  • butter - 2 tbsp. l.
  • vegetable oil - 1 tbsp. spoon

How can December and January do without your favorite winter characters? Therefore, we are preparing a delicious “Snowman” snack. This option will not leave either adults or children indifferent!

We will need:

  • cottage cheese - 150 gr
  • processed cheese - 1 piece
  • boiled eggs - 3 pcs
  • butter - 50 g (2.5 tablespoons)
  • mayonnaise - 2 teaspoons
  • walnuts - 1 tbsp. spoon
  • French fries, black bread, dry biscuits and bell pepper - for decoration
  • garlic - 1 piece
  • dill - for decoration
  • salt - to taste

Preparation:

1. Boil eggs and cool. Separate the whites from the yolks.

2. Grate the yolks and one third of the processed cheese chilled in the freezer on a fine grater. Grind the nuts using a mixer. Add mayonnaise and mix.

3. Wet your hands in water and form balls from the yolk mixture.

4. Grind the cottage cheese and remaining cheese through a sieve, add chopped garlic and butter. Add salt to taste and stir.

5. Cover the yolks with curd mixture and form a snowman.

6. Grate the whites on a fine grater. You can additionally stick them around the snowman, or you can put them on a plate, making improvised snow out of it.

7. Cut out hats from black bread. From vegetables - eyes and mouth. Fry the French fries and make handles. Decorate. Place cookies on a circle.

  • soda -2 teaspoons
  • salt - 1 teaspoon

Preparation:

1. Remove the butter from the refrigerator in advance so that it becomes soft. Beat it with a mixer into a thick white mass. Add powdered sugar, vanilla, salt, food coloring and beat everything until smooth.

2. Add milk, first 5 tablespoons, beat, and gradually add more to achieve the desired cream consistency. Beat the finished mixture for 5 - 7 minutes.

3. For the muffins, mix flour, sugar, cocoa, soda, salt and vanilla sugar. Sift through a sieve, preferably twice.

4. Pour in vinegar and stir with a fork. Then butter, and mix again with a fork. No need to beat!

5. Pour in water and continue whisking with a fork until smooth. Do not beat!

6. Place the dough in molds and bake for 30 minutes at 180 degrees.

7. Now let's start decorating. Grease the cake with cream and place the berry in the center so that it stands stable.

8. Place the cream in a pastry bag fitted with the smallest star tip.

9. Starting from the bottom, we form spruce branches from the cream. To do this, you need to place the end of the nozzle against the berry and squeeze out the cream about 1 cm. After you stop pressing, remove your hand. And we do the same for the next branch.

We arrange the branches in a checkerboard pattern in relation to the bottom row.

10. Decorate Christmas trees with jelly beans and star-cookies.

Ingredients:

  • prosciutto – 150 g;
  • salami – 150 g;
  • Romaine or Iceberg lettuce - 1 head;
  • olives (mixture of black and green) – 0.5 tbsp.;
  • hot or salad pepper, marinated - 0.5 tbsp.;

For the Italian dressing:

  • olive oil – 2.5 tbsp;
  • garlic clove - 1 pc.;
  • weak vinegar (apple, wine, balsamic) - 1.5 tbsp. l.;

  3. After 20 minutes, add broccoli to the potatoes. First you need to disassemble it into inflorescences, combine them in a bowl with the remaining olive oil, garlic and spices.

Roast the meat until the internal temperature is about 125 degrees, according to a food thermometer. On average it takes 20-25 minutes.
  5. The finished beef can be served directly on a baking sheet, or you can transfer it to a beautiful dish. Before cutting the meat into 0.5 cm slices, you need to let it cool for about 20 minutes.

  • English mustard – 2 tbsp. spoons;
  • Flour – 10 g;
  • Sea salt – 2 pinches;
  • Olive oil – 2 tbsp. spoons;
  • Freshly ground pepper – 5 g.

Cooking process:

Step 1. Mushrooms should be washed, dried and poured into a food processor, where they should be ground to a puree. The resulting mass should be placed in a frying pan heated over a fire and excess water should be evaporated from the mushrooms by frying them over high heat, stirring constantly, for about ten minutes. Next, place the mushrooms on a plate and set aside for now.

Step 2. Meanwhile, heat a little olive oil in a frying pan and fry the beef seasoned with pepper and salt on each side for 30 seconds. After this, the meat must be removed from the heat and, after allowing it to cool a little, coat with mustard.

Step 3. Place slices of ham overlapping on a piece of cling film laid out on the table, brush with mushroom mixture, and place a piece of meat coated with mustard on top, in the center.

Step 4. The cling film with the ham should be wrapped tightly around the beef, making a roll, which should be put in the refrigerator for 15-20 minutes.

Step 5. Sprinkle the surface of the table with flour and roll out the dough into a rectangle no more than 3-4 mm thick.

Step 6. You need to remove the film from the roll and place it in the very middle of the puff pastry rectangle. Brush the remaining dough around the roll with egg yolk and wrap the roll in the dough. Excess dough must be trimmed, then place the dough roll on a baking sheet, seam side down, brush with egg yolk and place in the refrigerator for about 15 minutes.



Step 7 The oven must be preheated to 200 degrees, remove the roll from the refrigerator, make small cuts on it, making sure to brush them with egg yolk, and place the roll in the oven. After 20 minutes, the temperature should be reduced to 180 degrees and continue baking for another 15 minutes.

  • Pollock fillet – 500 g;

  • Sour cream – ½ cup;
  • Natural yogurt – ½ cup;

Step 1. The fish should be washed, dried, seasoned with salt and pepper, and then marinated in the juice of half a lemon for 30 minutes.

Cottage cheese paste “Snowman”

What would New Year be without winter characters? Therefore, we are preparing a delicious “Snowman” snack. This snack will not leave either adults or children indifferent!

We will need:
  • cottage cheese - 150 gr
  • processed cheese - 1 piece
  • boiled eggs - 3 pcs
  • butter - 50 g (2.5 tablespoons)
  • mayonnaise - 2 teaspoons
  • walnuts - 1 tbsp. spoon
  • French fries, black bread, dry biscuits and bell pepper - for decoration
  • garlic - 1 piece
  • dill - for decoration
  • salt - to taste
Preparation:
  1. Boil the eggs and cool. Separate the whites from the yolks.
  2. Grate the yolks and one third of the processed cheese chilled in the freezer on a fine grater. Grind the nuts using a mixer. Add mayonnaise and mix.
  3. Wet your hands in water and form the yolk mixture into balls.
  4. Grind the cottage cheese and remaining cheese through a sieve, add chopped garlic and butter. Add salt to taste and stir.
  5. Cover the yolks with the curd mixture and form a snowman.
  6. Grate the whites on a fine grater. You can additionally stick them around the snowman, or you can put them on a plate, making improvised snow out of it.
  7. Cut out hats from black bread. From vegetables - eyes and mouth. Fry the French fries and make handles. Decorate. Place cookies on a circle.

You can also decorate a snowman using boiled carrots. A bucket hat can be cut out of it, just like a nose. You can make twig handles from dill.

We will need:
  • butter - 250 gr
  • powdered sugar - 500 gr
  • milk - 5-8 tbsp. spoons
  • vanilla - on the tip of a knife
  • salt - a pinch
  • green food coloring
For cupcakes:

(22-24 pieces)

  • flour - 3 cups
  • water - 2 glasses
  • sugar - 1.5-2 cups
  • cocoa - 6 tbsp. spoons
  • vegetable oil -3-4 tbsp. spoons
  • vinegar - 1.5-2 tbsp. spoons
  • soda -2 teaspoons
  • salt - 1 teaspoon
  • vanilla sugar - 2 teaspoons
Filling, decoration:
  • strawberry

Preparation:
  1. Remove the butter from the refrigerator in advance so that it becomes soft. Beat it with a mixer into a thick white mass. Add powdered sugar, vanilla, salt, food coloring and beat everything until smooth.
  2. Add milk, first 5 tablespoons, beat, and gradually add more to achieve the desired cream consistency. Beat the finished mixture for 5 - 7 minutes.
  3. For the muffins, mix flour, sugar, cocoa, soda, salt and vanilla sugar. Sift through a sieve, preferably twice.
  4. Pour in vinegar and stir with a fork. Then butter, and mix again with a fork. No need to beat!
  5. Pour in water and continue whisking with a fork until smooth. Do not beat!
  6. Place the dough in molds and bake for 30 minutes at 180 degrees.
  7. Now let's start decorating. Grease the cake with cream and place the berry in the center so that it stands stable.
  8. Place the cream in a pastry bag fitted with the smallest star tip.
  9. Starting from the bottom, we form spruce branches from the cream. To do this, you need to place the end of the nozzle against the berry and squeeze out the cream about 1 cm. After you stop pressing, remove your hand. And we do the same for the next branch.

We arrange the branches in a checkerboard pattern in relation to the bottom row.
