Chips at home. How to make homemade chips. How to make potato chips at home

Preheat the oven. If you cook the chips slowly, they will bake evenly and have a crispy texture. Set the oven temperature to 160 degrees Celsius. Place the baking sheet in the oven in the middle position.

Prepare the potatoes. Rub the potatoes under running water to get rid of dirt and be able to cut off any unripe areas. You can leave the skin bare or cut it off completely if you prefer a uniform appearance.

Cut the potatoes into thin slices. Unevenly cut pieces are much more difficult to cook, as the thinner sections will begin to burn before the thicker sections are cooked. Use a mandoline cutter to cut the potatoes into 3mm thick slices, or use the special blade of a food processor. If you don't have any of the above, sharpen your knife and cut the potatoes by hand.

Boil potatoes to remove starch (optional). Starch molecules are long chains of sugar molecules, so they also caramelize and turn black when heated. If you prefer to eat light-colored potato chips, boil the potato chips to remove the starch:

  • For every two to three large potatoes, add 2 liters of water and 2 tablespoons (30 ml) vinegar to the pan. The vinegar will keep the potatoes from falling apart.
  • Boil it.
  • Add the potato slices and cook for exactly three minutes. Cook for one to two minutes if the pieces are thinner than 3 millimeters.
  • Drain and transfer potatoes to a baking sheet lined with paper towels.
  • Dry and leave the potatoes on a towel for about 5 minutes. Move the slices periodically to ensure they dry evenly.
  • Grease the baking sheet and potato slices. Use olive oil, butter or a special spray to grease the surface of the baking sheet or container in which you are going to bake it.

Place potato slices on a baking sheet in a single layer. Apply a little oil to their surface with a brush or spray, or simply turn the other side over onto a greased baking sheet.

Sprinkle the potatoes with salt and spices to taste. Below are some ideas.

  • Bake the potatoes for 15-30 minutes. Check your oven frequently as cooking times may vary depending on the type of potato. Turn the baking sheet to the other side in the oven so that the dish cooks evenly. Remove the chips when they are completely dry and the edges are golden brown. If desired, you can fry them even more.

    • If some pieces darken faster than others, remove them with tongs and continue baking the remaining ones.
    • Cooking times are for 3mm thick slices. It will take longer if your chips are thicker.
  • Everyone loves crispy fried chips: children love to crunch on potato deliciousness in front of the TV, adults adore them as an excellent snack with beer.

Store-bought chips, as a rule, contain various harmful additives, flavors, GMOs, preservatives, etc. Homemade chips consist only of natural ingredients: potatoes, salt and vegetable oil, and therefore are absolutely harmless to the body.

Making chips at home is not difficult and the whole process only takes a few simple steps. Moreover, for this it is not necessary to have any special devices, such as a deep fryer. Homemade chips can be cooked in the oven, in the microwave, or in a regular frying pan.

    Homemade chips recipes

One serving of potato chips, equal to about a small bag of store-bought chips, requires one medium-sized potato. The amount of oil is determined depending on the size of the container in which the chips will be prepared (its level should not exceed 2-3 cm). Add salt to chips to taste.

    Ingredients:

    • Medium sized potatoes;
    • Vegetable oil;
    • Salt.

Homemade chips recipe in a frying pan

    1. Peel the potatoes and wash them thoroughly. Cut into thin circles. It’s better if you use a vegetable cutter for this - it’s more convenient, and the circles for the chips turn out more or less the same.
    2. Place the slices on a towel to dry a little.
    3. Pour oil into a deep frying pan (cauldron, thick-walled pan) and bring it to a boil.
    4. Throw the dried slices one at a time into the boiling oil so that they do not come into contact with each other. Stir the chips slightly using a wooden spatula.
    5. We determine the readiness of the chips by their color (they should be golden, not brown) and by the characteristic tapping sound of the chips when stirred.
    6. Remove the chips to a plate covered with a napkin or paper towel to drain off excess vegetable oil.
    7. Then, while the chips are still hot, add salt to taste.

Classic natural potato chips are ready. However, if you don't want to deal with boiling oil, you can cook the chips in the oven.

    Homemade Oven Chips Recipe

    1. Dry the washed and thinly sliced potatoes on a paper towel.
    2. Place the resulting circles in a deep plate or salad bowl and sprinkle with about 1 teaspoon of vegetable oil.
    3. Add a little salt and gently mix the chips so that the oil is evenly distributed over the entire surface, but without breaking the slices.
    4. Line a baking tray with baking paper and grease with vegetable oil.
    5. Place the potato wedges in one layer on the surface of the baking sheet so that they do not touch each other.
    6. Place in an oven heated to 180-200 degrees and bake until golden brown.
    7. Place the finished chips on a paper towel. If necessary, sprinkle with more spices and salt.

This recipe uses less vegetable oil than when cooking chips in a frying pan. If you want to completely avoid adding oil to chips (for example, if you are making chips for children), cook them in the microwave.

Homemade chips recipe in the microwave

    1. Dry the peeled and thinly sliced potatoes a little on a paper napkin.
    2. Place the prepared potato slices on special baking paper, making sure that they do not touch each other.
    3. We set the power on the microwave to about 600-750 W (we can’t exactly recommend it, it all depends on the type of microwave), and cook for about 5-7 minutes.
    4. When the chips are browned, immediately take them out and place them on a wide plate.
    5. Add salt and spices to taste to the still hot chips.

Chips cooked in a microwave oven will not be inferior in taste to those cooked in an oven or frying pan, but they are much healthier and safer for children. And they are made much faster and easier.

    Homemade chips - cooking features

    • For homemade chips, choose only even and smooth “ideal” potatoes. If you cut out “eyes” and other defects, the chips will turn out uneven and ugly.
    • After cutting, it is best to rinse potato slices in cold water to remove excess starch. Then the chips will not stick to each other when frying.
    • To prevent the finished chips from sticking to the plate, I use baking paper as a “bedding” for the chips. As a last resort, sprinkle the plate with a thin layer of flour.
    • The taste of homemade chips is not pronounced compared to store-bought ones, since they do not contain flavorings. However, you can add spices to your taste: paprika, a mixture of spicy or Provençal herbs, etc. If you know other natural seasonings for homemade chips, share this discovery with us.

Making homemade chips is a rather lengthy process and therefore it is necessary to make them only when you have enough free time.

Microwave chips are not only easy to cook, but also quite quick.

The good thing about this recipe is that you only need 3 ingredients:

    • potatoes - 300 g. It is advisable not to use young potatoes, the chips will not be very tasty, they will taste starchy;
    • vegetable oil – 60 g;
    • spices to taste.

    Cooking steps:

    1. Cut the skins off the potatoes, wash them well and place in cold boiled water for at least 15 minutes. In this case, excess starch will be removed.

    3. Grease the dishes with oil, place the potatoes so that future chips do not touch each other.
    4. Sprinkle with spices.
    5. Place the dish in the microwave at maximum power.

Total cooking time is 4 minutes. After 2 minutes, stop the timer, turn the chips over so that the other side also has a crust.

As soon as the microwave has finished working, you need to remove the dish. Otherwise, the chips will quickly become soggy and turn into tasteless fried potatoes.

Homemade chips are very popular. The snack turns out tasty, but not harmful. Our recipes will help show off your culinary talent and surprise your guests.

There is probably no person who doesn’t like chips. This tasty, crispy and aromatic dish has become a favorite delicacy of millions of people around the world. And this despite the fact that such a “culinary masterpiece” is considered quite harmful, especially for children. After all, a lot of “chemical ingredients” are added to the delicacy that can be bought in every grocery store, allowing it to be preserved for as long as possible. But what to do if you are not able to deny yourself this pleasure? In this case, homemade chips, which can be prepared in different ways, are an excellent alternative.

This dish will serve as an excellent appetizer, an excellent side dish and an excellent addition to many other dishes, and the harm from them will be no more than from any other dish made from potatoes. Today we invite you to learn how to make chips at home; chips are not only tasty, but also healthy.

Why are chips considered a harmful product?

Chips bought at the store have virtually no benefit, but there is enough harm. The fact is that potatoes contain a large amount of starch. It turns into glucose, which makes the body full. And glucose can be converted into acrylamide, a component dangerous to the body.

If you consume it regularly, cancer may begin to develop. Women aged 30-45 years are most vulnerable to this disease, since they are the ones who develop tumors in the area of the uterus and ovaries.

Other reasons why potato chips are considered unhealthy are as follows.

    1. The same oil is used for cooking, but it needs to be changed after each batch of potatoes. This causes the amount of cholesterol in the blood to increase.
    2. Chemicals are added to the product. Most often these are flavorings, dyes, and taste enhancers. According to the regulations, a certain proportion of these components is indeed allowed, but manufacturers often exceed this norm. This affects a person’s general well-being and is fraught with metabolic disorders, allergic reactions, and destruction of tooth enamel.
    3. It contains a lot of salt. It interferes with the normal growth of hair, nails and bones, and destroys vitamin C. Excessive consumption of such chips can ultimately lead to heart problems.
    4. Chips are an incredibly high-calorie food, so it's no surprise that they contribute to obesity. 100 g of chips contain 510 kilocalories, which is a quarter of the daily requirement!

But potato chips are not only harmful to human health. They also have some beneficial properties, including satisfying hunger and improving mood (especially when you really want to eat this product, that is, emotional, psychological hunger sets in).

How to make chips at home

To make healthy and tasty potato chips at home, you need to choose the right raw materials. This product requires potatoes with a high dry matter content (from 20%). If it's too watery, you won't get crispy chips. The following potato varieties are perfect:

    Classic recipe

    Ingredients:

    • Potatoes - 600 g.
    • Vegetable oil - 3 tbsp. spoons.
    • Dill - 1 bunch.
    • Garlic - 2 cloves.
    • Salt and pepper.

    Preparation:

    1. Wash the potatoes in warm water and peel. For new potatoes, leave the skins on. As a result, homemade chips will receive a beautiful frame. Place the potatoes on a paper towel to dry.
    2. Peel the garlic. Finely chop both slices. I do not recommend using a press, otherwise you will end up with garlic puree instead of tiny pieces.
    3. Rinse the greens, shake off the water, and cut off the bottom of the sprigs. Divide the dill into two parts, set one aside and chop the second.
    4. Place a shallow and wide container on the stove and pour in the oil. To obtain flavorful chips, I recommend using unrefined olive or sunflower oil. Add chopped herbs and garlic to the oil.
    5. Cut the potatoes into thin slices. A food processor or a special vegetable cutter will make the task easier. I make do with a kitchen knife.
    6. Place the prepared potatoes in a container with spiced oil, cover with a lid and shake. As a result, each potato circle will be soaked in oil. Remove the lid and leave the potatoes for half an hour.
    7. Place paper on the bottom of the mold or baking sheet. It is important that the edges of the paper do not protrude, otherwise they will burn. Place potatoes on top in a single layer.
    8. Place the pan with potatoes in an oven preheated to two hundred degrees for about twenty minutes. If you want a crispier delicacy, increase the cooking time by one and a half times.
    9. All you have to do is take the appetizer out of the oven, wait until it cools down, put it in a beautiful bowl and sprinkle with dill. I recommend serving with sour cream.

The best thing you can do to avoid harming your body is to learn how to make chips at home. It seems so simpler, but you will never get the chips you expect if you don’t know a few important secrets.

It is not difficult to prepare such a delicacy yourself. Homemade chips, unlike store-bought ones that contain preservatives, flavors and other harmless additives, are completely harmless to the body. They contain only natural products: potatoes, vegetable oil and salt. Cooking does not require special equipment, an oven or microwave is enough, and in the absence of such, an ordinary frying pan will do. Follow these simple requirements, and the crunch of potato slices will delight everyone without exception.

    1. Not only taste qualities are important, but also aesthetic ones. Therefore, put the “defective” (eyes, bumps) source material aside, and leave the smooth potatoes for processing.
    2. By rinsing the slices with cold water, you can reduce the starch content, after which the chips will not stick together during frying.
    3. Place the cooked potatoes on a plate, having previously covered them with baking paper, or sprinkle the dish with flour.
    4. You can add a slight piquancy to the taste of homemade chips by adding paprika, herbs or other spices at your discretion.

As you can see, making golden and crispy chips at home is very easy and simple. It is better to store them in a paper bag, in a dry place, and can be served as a side dish or snack for beer. Bon appetit!

Homemade chips - general cooking principles

How do you feel about chips? Most likely, if you have tried them at least once, the answer will be: “They are very tasty, but harmful!” No wonder. As biologists have proven, the human body is “programmed” to maintain weight, and therefore, a priori, we taste high-calorie, fatty and filling food. Perhaps there are no people who can resist a sweet cream cake (those who consider themselves to have a sweet tooth) or fried meat or poultry (those who do not honor sweets). Chips are one example of such food, and your preferences have nothing to do with it. If you've tried store-bought chips at least once, you know they're delicious! But something else is also true - industrially produced chips are quite harmful. The fact is that to prepare them, potatoes are not only fried in a large amount of oil, which is not very good for our body, but then they are also actively sprinkled with monosodium glutamate. This component is a taste enhancer, that is, it is tasteless in itself, but it greatly enhances our gastronomic sensations. That's why children love crackers and chips so much and can eat them without measure.

This is not to say that homemade chips can be made very healthy. Still, fried potatoes are a mixture of carbohydrates and fat, which is not very good for your waistline. But if you enjoy it little by little and not in the evening, then why not? In addition, we will offer you lavash chips, a low-calorie crispy treat, and cheese chips. You can also try making a carrot or zucchini snack.

Homemade chips - food and utensil preparation

By and large, any housewife can make homemade chips. You don’t need complex kitchen appliances - not everyone has a deep fryer, but a regular frying pan, oven or microwave is found in almost every home. But a paring knife will be very useful and necessary in making chips. Such a thing costs no more than 40-50 rubles (15-20 UAH), but it makes life much easier for cooks. This knife is very convenient for peeling vegetables and fruits and cutting vegetables very thinly. Without this knife, it will be practically impossible to cut chips very thinly. You can buy such a useful “thing” in a store or at the market.

Chips are most often made from potatoes, so in most of the proposed recipes it will be the main and almost the only ingredient. What about spices? After all, chips come with bacon, chicken or cheese? That's right, because you will also need aromatic salt - there are a huge variety of such additives on the store shelf, you can choose according to your taste. But remember that such an ingredient contains a flavor enhancer, which we talked about above, and therefore you can eat much more chips with such salt than without it.

    Homemade chips recipes:

    Recipe 1: Homemade Potato Chips

The simplest chips are, of course, those that are prepared with a minimum amount of effort and time. You will need a regular frying pan, a stove and a paring knife to turn the potatoes into thin slices. Of course, if you compare homemade chips with those in a pack, the difference is visible to the naked eye. And yet the recipe is good, and the dish turns out excellent - either as an additive to beer, or as a separate delicacy. Before use, cool to room temperature.

    Required ingredients:

    • Potatoes 5-6 tubers
    • Aromatic salt
    • Refined vegetable oil

    Cooking method:

  • Wash the potatoes, peel them, and cut them into thin slices, best using a vegetable peeler. The thickness of the slice should be about 2 mm.
  • After this, place the potato mugs in water for five minutes, after this period of time we drain the water and fill it again with clean water. We continue this procedure until the potatoes become transparent and the water stops turning white. This procedure helps wash out all the starch from the potatoes.
  • Heat a frying pan and pour in one centimeter of oil. Place the mugs of chips so that they do not touch.
  • Fry the potato slices on both sides, then place them on a plate, sprinkle generously with salt and let cool.
  • Recipe 2: Homemade chips in the microwave

Is it possible to make chips as diet chips? It’s possible if we make them in the microwave. To prepare this dish we don’t need any oil at all.

    Required ingredients:

    • Potatoes 5-6 tubers
    • Aromatic salt

    Cooking method:

  • Wash the potatoes with their skins, peel them, and then use a paring knife to cut them into very thin circles. We repeat the procedure to wash out the starch - fill the slices with water several times until it becomes transparent.
  • Let the potatoes dry - spread them on paper or regular towels and leave for ten minutes. Add some salt.
  • Place the chips on a plate so that they are not touching and cook for eight minutes at 900 W. To ensure the dish is fried more evenly, you can turn the slices over, but even without this, the chips will turn out tasty and crispy, without being at all greasy.
  • Recipe 3: Homemade chips in the oven

If you don’t have a microwave, but you want to “lighten” the chips and minimize oil consumption, then use the oven to prepare the dish.

    Required ingredients:

    • Potato

    • Refined sunflower oil

    Cooking method:

  • Place dry potatoes in a deep container, sprinkle with oil and salt. Leave the potato slices for 10-15 minutes to soak.
  • Place the chips on the baking deck without greasing them with oil so that they do not touch. Place in the oven to dry for fifteen minutes at a temperature of two hundred degrees. Don't forget to keep an eye on the potatoes, because depending on the type of oven you have, the dish may burn.
  • Recipe 4: Homemade Lavash Chips

When you eat a bag of store-bought chips, can you be sure that you are eating potatoes? We bet not! Chips are something thin and crispy, with the aroma of mushrooms or jellied meat, but the potatoes are practically unnoticeable. We offer you a delicious recipe for lavash chips - they will taste exactly like everyone’s favorite “crunchies” from the package, and only you will know the secret of this dish.

    Required ingredients:

    • Armenian thin lavash
    • Fresh dried dill
    • Olive oil
    • Garlic 3 cloves

  • By the way, to make the chips fatter, you can grease them with a mixture of mayonnaise and garlic or a small amount of sour cream.

Recipe 5: Homemade Mashed Potato Chips

This unusual snack will appeal to both adults and children. True, to prepare them you will need a waffle iron, and another “tool” will not work here, but the chips will turn out tasty, crispy and unusual.

    Required ingredients:

    • Potatoes 4-5 tubers
    • 1 egg
    • 1/3 cup milk
    • 4 tablespoons flour
    • Salt and spices
    • Oil (for greasing the waffle iron)

    Cooking method:

  • Peel the potatoes, use the setting and cook on the stove in a saucepan as for regular mashed potatoes. Grind with a masher into a homogeneous mass - the puree should be of uniform consistency, without lumps.
  • Add the egg, flour and milk to the puree (slightly cooled) and mix with a blender. The resulting mass should resemble cream and be quite thin, but not liquid, otherwise the “batter” will leak out of the waffle iron.
  • Add salt and spices to the potatoes to taste. You can take aromatic salt from the store, or you can use dried peppers, mushrooms, and herbs.
  • You can use the simplest waffle iron from Soviet times. Heat it and grease it with oil. The oil must be refined and odorless. Olive oil is also not suitable.
  • Place a tablespoon of potato “dough” on the surface, lightly spread and bake. Please note that the chips burn very quickly, and therefore they need to be baked for no more than thirty to forty seconds, after which open the lid and remove them with a knife.
  • You can sprinkle the finished potato chips with a little more salt and flavoring. If you want to give these chips a store-bought look, then place half a tablespoon of “dough” on the surface of the waffle iron, and place the finished chips on a rolling pin, then they will turn out exactly like those from a pack of Pringles or Layz.

    Recipe 6: Homemade Cheese Chips

It doesn’t matter whether you love cheese or are indifferent to it, cheese chips will surprise you and be remembered as a tasty and satisfying snack. Well, let’s put it to work!

    Required ingredients:

    • Hard cheese

    Cooking method:

  • We grate the cheese on a fine grater and place it in small piles on the baking deck. You need to place it so that the “piles”, when melted, do not connect with each other - that is, at a sufficient distance from each other.
  • Place the deck with cheese in the oven and leave for four to six minutes at a temperature of one hundred and sixty degrees. The process of melting the cheese is very fast, and therefore the chips must be taken out as soon as a brown crust appears, otherwise the cheese will burn. That's all. Cool and serve.
  • By the way, these chips can be prepared with anything - for example, add carbonated cheese or sausage, herbs, garlic, bread crumbs. It will be difficult to guess what these “crunchies” are made of, but they have a wonderful taste.
