In the modern rhythm of life, rush, bustle and worries often become our companions. Each of us is familiar with the situation when there is absolutely no time left to prepare dinner. In fact, there are many recipes that allow you to whip up dinner, but not every housewife knows about it. Don't believe me?

Is lunch necessary?

Clinical studies show that it is impossible to completely skip lunch. This can be harmful to health, lead to poor health, and disruption of the gastrointestinal tract. However, nutritionists have found that heavy meals are no less harmful to health. They negatively affect performance, lead to stress on the cardiovascular system, and cause drowsiness. Therefore, the key to good health is healthy, balanced and even dietary lunches.

  • Many experts advise sticking to fractional meals - eat small portions 5-6 times a day. This will prevent you from overloading your body.
  • The diet should definitely include more fresh vegetables, fruits, herbs, vegetable oils, as well as protein products (low-fat meats, seafood).
  • Should avoid long intervals between meals. This not only contributes to weight gain, but also leads to stress.
  • Be sure to eat hot food once a day, without giving up soup or a main course.
  • Don't give up broths. Research by nutritionists has shown that simple chicken broth contains a special enzyme - “lysocism”, which improves immunity, allows you to fight colds and viruses.

What's best to cook for lunch?

Set lunches

The most delicious and healthy lunch is a set lunch, including three dishes:

First course

Hot soup. It is a mistake to believe that it takes a lot of time to prepare it. Of course, if you are going to serve signature Ukrainian borscht, it will take a lot of effort and will take at least 1.5-2 hours, especially for beginners. But simple and light soups can actually be prepared in 30-45 minutes. It can be:

  • chicken broths with croutons, seasoned with fresh herbs or noodles;
  • vegetable light soups;
  • cheese soups without adding meat;
  • mushroom soups.

Second course

As a rule, it consists of a side dish and a meat or fish dish. The easiest way is to cook porridge or pasta as a side dish. They take no more than 15 minutes. At this time, you can fry the minced meat on the stove or the champignons with onions, and then mix with the side dish. In just 20 minutes you will get navy pasta or buckwheat with mushrooms. You can bake pieces of fish fillet or chicken in the oven.

Third course

It can be compote or jelly, or the simplest thing is black tea.

Quick lunches

Of course, set lunches are always more delicious and filling. But what to do if there is absolutely no time left? Is it better to refuse food or eat at fast food? Don't rush to conclusions! Even in a hurry, in just 15 minutes you can prepare a balanced, delicious lunch. These can be various vegetable salads, hot smoked fish, sandwiches with pieces of meat fillet and green lettuce, fresh juices and yoghurts.

Examples of simple and quick recipes

Quick recipe for cheese soup with mushrooms

We will need: 250 grams of champignons, one processed cheese (in the store it is called “cheese for soup”), two potatoes, an onion, carrots, two tablespoons of spider web pasta, white bread croutons, salt and black pepper, fresh herbs.

Cooking steps:

  • Pour 2 liters of water into a saucepan and place it on the stove.
  • While the water is boiling, chop the carrots, onions, champignons, fry in a frying pan until golden brown and put in the pan.
  • Cut the potatoes into cubes and put them in a saucepan.
  • We wait until the vegetables are cooked and add the cheese. Stir the soup thoroughly with a spoon until the cheese is completely dissolved.
  • Add the pasta, wait 2-3 minutes and turn off the soup.
  • Serve with crackers and fresh herbs.

To make vegetables cook faster, you need to try to cut them as finely as possible. And to save time, you only need to use pasta or instant noodles.

Navy pasta in 20 minutes

We will need: pasta - 400 grams, minced meat - 300 grams, onion, salt and ground pepper, tomato paste - 2 spoons, sunflower oil.

Cooking steps:

Advice: While the pasta is boiling, immediately start stuffing it so as not to waste time.

  • Place minced meat, salt and pepper in a frying pan with onions and mix.
  • Wait 10 minutes, add tomato paste.
  • We wait another 5 minutes and put the cooked pasta into the minced meat. Mix everything, fry for 5 minutes and you can turn off the stove

Fried potatoes with fragrant bacon

We will need: 2 strips of bacon, 400 grams of potatoes, vegetable oil, a tablespoon of brown sugar, a clove of garlic, 3 tablespoons of apple cider vinegar, a teaspoon of mustard, fresh herbs (dill, parsley, onion), salt and pepper.

Cooking steps:

  • Potatoes need to be cut into strips and boiled on the stove.
  • Then fry the bacon in a frying pan, drain off excess oil, break the bacon into small pieces.
  • Place the potatoes in the pan where the bacon was fried, add vegetable oil and fry a little.
  • Add garlic, salt, sugar to potatoes, pour in vinegar, stir. After a few minutes you can turn it off.

You need to make sure that the potatoes are half cooked, otherwise they will begin to crumble when frying.

Tomato and egg salad

We will need: 5 boiled eggs, bell pepper, onion, green lettuce, celery root, cheese, mayonnaise

Cooking steps

  • Boiled eggs should be cut into cubes and placed in a deep bowl.
  • Cut the celery and red pepper into strips and finely chop the onion, put in a bowl. Add salt, pepper, 2 tablespoons of mayonnaise, mix.
  • Now you need to take a plate and put lettuce leaves on it, and tomatoes cut into half rings on top. Place the prepared salad on the tomatoes and serve. You can decorate the top with mint leaves and sprinkle with dill.

As you can see, there are many delicious, healthy, quick dinner recipes out there. Don't limit yourself and refuse to eat at lunchtime. It is much better to learn how to cook it correctly and quickly.

Dinner- this is an integral part of a healthy, proper diet, the recipes for which can be not only complex, but also can be done in a hurry. Therefore, you should not think that preparing lunch food is an unimaginably long procedure that takes up too much time.

When talking about lunch, you need to understand that this is a very important part of the diet, which accounts for the bulk of food consumed per day (about 40-50%). It should be quite filling. However, it is also worth understanding that overeating is unacceptable! The number of dishes consumed at lunchtime can vary from two to four. If we talk about a full meal, it should consist of appetizers, soup, a main course, as well as dessert accompanied by some kind of drink. Although most often lunch consists of two courses: the first and the main second.

When creating a lunch menu, you should take into account some rules for a healthy balanced diet. For example, it is better to combine meat and fish with light vegetable salads, but not with potatoes or pasta. This is due to the fact that protein and carbohydrate foods are poorly digested together (fermentation processes occur in the stomach, which causes the digestive system to be severely overloaded). As for dessert for lunch, it should also be light if possible. For example, the ideal option would be a sweet salad made from seasonal fruits and berries, the recipe for which, by the way, will not require more time and effort from you.

The two lunch options that we looked at earlier are more like homemade family dinners. In reality, they look completely different. We all have to earn money, and at work we certainly won’t be able to “feast” like at home! However, lunch at work can also be made nutritious. Firstly, forget about dry sandwiches and all kinds of fast food. Secondly, prepare in advance. Prepare yourself a meal for lunch the evening before or the morning before work. This could be, for example, a piece of baked fish with vegetables and a fruit salad. You can also take soup with you, because today special compact thermoses have been created for first courses. So in this case, there is essentially no problem! Adequate nutrition at work is just a matter of your desire!

Children's lunches also deserve special attention. They must be carefully thought out, because a growing body requires a full range of vitamins and minerals. For example, a child’s diet must include soup. It can be prepared with either vegetable or meat broth. Also, the children's lunch menu should include a main hot dish. It is only necessary to take into account that the meat should be light dietary. Pork is unacceptable in a child's diet (it is too fatty and difficult to digest). The same goes for mushrooms. Natural juices or compote must also be included in children's lunches.

If you have any questions about what to eat for lunch or what to cook, then you are welcome to visit our website! On it you will find a lot of photo recipes that describe in detail the procedure and technology for preparing dishes. Step-by-step pictures visualize the cooking process. This will most help those new to cooking who have very little experience. You can also get a lot of interesting and original ideas here, surprising your household with something delicious for lunch!

Lunch, a pleasant and necessary time. Take a break, eat, chat. It doesn’t matter whether people spend it at home or eat in places closest to work. Although, with current prices, home-cooked food is cheaper, so housewives often cook in advance and bring a cold lunch with them; fortunately, microwaves are usually located in rest rooms. What to cook for lunch quickly and tasty, without any extra expenses and preferably varied? Of course, it’s a good thing, but it’s unlikely that anyone will want to eat them for a week in a row. Children are especially difficult to please.

Tasty, cheap and easy

It’s delicious - so that everyone, even small children, will like the prepared lunch and want to eat more.

Cheap - prices, especially for various products, do not stop rising. Alas, most families do not indulge, they try to take more simple products, which are cheaper, and try to somehow diversify their menu.

Simple means quickly, without any special hassles. A modern housewife often cannot stand idle in the kitchen for hours, creating another masterpiece, imitating the chefs of famous restaurants. Chefs are at work, and they get paid decently for their masterpieces. And besides food, the housewife still has a lot of things to do. Men often do the cooking. Therefore, it’s easier to whip up lunch, especially since simple dishes are also delicious.

Cook with reserve

Some people try to cook more of something and then reheat it for several days. For example, a pot of soup or a pile of cutlets. However, the option with cutlets is better, because you can then cook different side dishes for them, and heat them up little by little. As for soup, experienced chefs do not recommend eating heated food often. Storage kills the beneficial properties, best of all - only a cooked dish, preferably baked or stewed. Fried foods are fattier and contain a lot of oil.

Some American housewives try to prepare homemade semi-finished products over the weekend, then use them for a week, turning them into full-fledged, varied dishes. Fast, natural (after all, the semi-finished products are homemade), the dish will be fresh every time. At the same time, weekly lunches, no problem. There is no need to painfully choose what to cook every time.

Semi-finished product option

Dumplings - who remembers how the whole family sat down to make dozens of small dumplings, and then cooked them in a large pan for everyone? Of course, there was no reserve, because everything was eaten in an instant. But you can do it on purpose, planning for a long time. You can cook dumplings quickly, they make a delicious, filling lunch. Moreover, there are many recipes where dumplings are added to soups and baked, for example, “Siberian style”, where dumplings are from the oven, with mushrooms in cream. Dumplings in portions, in pots. You can also buy store-bought ones, but homemade ones will be much tastier, and at the same time you are sure that there is real meat inside, everything was prepared with your own hands. In the freezer, a supply of dumplings can be safely stored for days and weeks.

Sausages - or small sausages. Of course, this is not a complete preparation, because they are store-bought, but it is quite an easy, satisfying and quick lunch. Take a bunch of sausages, they will last a long time. You don’t have to dine on them only; you can alternate them. Today - sausages, tomorrow something else. And try different side dishes at the same time.

Steaks - take a piece of meat specifically for steaks, cut it into portions, each piece into its own separate bag. Then take it out as needed, defrost it and move on. The steaks also come with a variety of side dishes.

Cutlets - stored raw, after sculpting. You can use any: chicken or fish, meat. Stick it in advance. Fry or bake some immediately, the rest goes into the freezer.

In a similar way, you can “freeze” cabbage rolls and cabbage rolls for yourself. Large supermarkets offer many options for such semi-finished products, offering what to prepare for lunch quickly and easily, and inexpensively, a recipe with a photo is also on the packages of such “helpers”. However, of course, you cannot vouch for the taste and quality of purchased semi-finished products. Moreover, most manufacturers put various stabilizers and preservatives there. Therefore, homemade preparations are many times healthier, safer and, of course, tastier. At the same time - a good time saver. You can follow the example of the same American housewife and immediately think through a weekly menu.

What else, besides homemade semi-finished products, can be prepared quickly?

"Lazy Wife"

A good casserole, pre-made dumplings will come in handy! The ingredients here are for 4 separate, full servings.

Ingredients:

  • Frozen dumplings – 800 g;
  • Onions – 2-3 pcs;
  • Hard cheese (any type) – 100 g;
  • Chicken eggs – 4 pcs;
  • Mayonnaise (you can use sour cream) – 250 g;
  • Salt;
  • Pepper;
  • Greenery.

Preparation:

Lay out all the necessary products so that everything is conveniently at hand. Turn on the oven in advance, then peel and wash the onions. Cut into cubes, finely.

Heat a frying pan, pour a little oil into it. Fry the onion for about 2-3 minutes, watching and stirring regularly, otherwise it will burn quickly. Wait for the golden color to appear.

Place all 600 g of dumplings there, trying to fit them on one layer. Salt and pepper. Fried onions come on top.

Separately, in a convenient small bowl, beat all 4 eggs, add spices, and top with mayonnaise (sour cream). Beat everything until you get a homogeneous, ready-made mixture.

Pour it over the dumplings. Grate all the cheese using a coarse grater. Sprinkle it over the last layer of dumplings. Place the pan on the middle oven shelf. Baked at 200-220 degrees for about 40 minutes. Decorate the finished casserole (optional) with fresh herbs. All.

Meatless cutlets

A healthy, tasty and inexpensive recipe, because meat, no matter whether it’s chicken or beef, costs a decent amount, especially if you plan to make cutlets. And here it’s delicious.

What you will need:

  • Cabbage (regular, fresh) – 500 g;
  • Semolina – 2 tablespoons (large, tablespoons);
  • Ground crackers - 2 tablespoons (large, tablespoons);
  • Vegetable oil – 3 tablespoons (large);
  • Water – half a glass.

Preparation:

First wash the cabbage, then chop it finely and simmer in a deep saucepan, adding water and vegetable oil (take 1 spoon out of 3).

Simmer until approximately half cooked. Then slowly add the cereal in a thin stream. Continue cooking, stirring constantly, for about 10-15 minutes. Then add salt and leave to cool slightly.

Next, carefully form the cutlets and roll each one in a plate with breadcrumbs. Fry as usual, in oil. By the way, when chopping cabbage, you can use a blender, it’s faster. A side dish would be potatoes or rice. The cutlets are fried quite quickly, since the cabbage is already prepared inside.

Rice with smoked chicken

You will need a multicooker, however, an ordinary saucepan will do, the main thing is the ability to cook well.

Ingredients:

  • Smoked chicken – 400 g;
  • Curry paste – 1 spoon (large, tablespoon);
  • Rice (regular) – 250 g;
  • Onion – 1 piece;
  • Garlic – 1 zb;
  • Egg, chicken – 4 pcs;
  • Butter – 20 g;
  • Lemon;
  • Salt.

Preparation:

First, boil the rice separately (it’s easy in a slow cooker; there’s a separate, special mode, and while it’s stewing inside, you can work on other ingredients). Chop the onion as finely as possible.

Take a large, comfortable frying pan, first heat the olive oil, then melt the butter (ibid.). Add chopped onion there first. Simmer it, maintaining low, medium heat for about 10 minutes. Crush the garlic, then add to the onion, followed by the curry paste. Mix everything, then add salt. Simmer for a minute.

Add the finished rice to the mixture, stir and let stand for a couple of minutes. Cut the meat from the smoked leg, chop into medium, if possible equal squares, then add to the rice.

Gently grate the zest from the lemon. First boil the eggs separately, wait until the yolks remain semi-cooked and soft. Peel, then cut into quarters. Add with zest to rice. Stir the dish and add herbs if desired. All.

Instead of chicken, you can use ham or plain meat. By the way, if there is still some boiled meat left from dinner or last lunch, take it. You will get a new, tasty dish, and at the same time save money.

Pasta with eggs

A delicious, vegetarian lunch, although maybe dinner. Prepares quickly.

Ingredients:

  • Pasta (can be of any shape, here spaghetti) – 150 g;
  • Chicken eggs - 3 pcs;
  • Mayonnaise – 1 spoon (large, tablespoon);
  • Fresh greens;
  • Salt;
  • Black pepper;
  • Vegetable oil.

Preparation:

First, cook the pasta as usual in a saucepan. Try not to overcook, let them be a little tough. Veteran chefs recommend this method, at the same time the product retains more properties and shape. Not harmful to the stomach.

Then throw the finished pasta into a colander, let it stand, and at the same time the excess liquid will drain away. Break all the eggs into a deep, comfortable bowl. Add spices there, also chopped herbs.

Mayonnaise also goes there, a tablespoon (however, you can use sour cream). Now beat everything thoroughly. You can use a whisk or a mixer, whatever you have. The main thing is to achieve a homogeneous, ready-made mixture.

Place the boiled pasta in a comfortable, deep form, where you will then bake. Its walls and bottom must be lubricated in advance so that the contents can be easily removed.

Pour the whipped mixture over the pasta. Bake in a 200 degree, preheated oven for about 10-15 minutes, making sure that the egg mass is set. All is ready.

Important: watch the amount of egg mixture. If necessary, you can add a little milk or cream so that the result does not come out dry.
