Ingredients

For the test:

2 tbsp. oat bran

ground into flour

1 tbsp. wheat bran

100 ml. skim milk

1.5 tsp. baking powder

For the soufflé:

300 g soft low-fat cottage cheese

100 ml. skim milk

10 g gelatin

vanilla, aromatics to taste

Dukan cake

Preparation

Mix all the dry ingredients. We separate the whites from the yolks. Add the yolks, sugar and milk to the dough, beat until smooth (if there are flavors, add them now)

Beat the egg whites with a pinch of salt until very stiff peaks form. Remember, the whites must be beaten for at least 10 minutes. As a result, there should be a spoon in the whites. Gently fold the whites into the dough IN PARTS! so that they do not fall, use gentle movements from bottom to top

Pour the dough into a small mold to make a tall sponge cake (I used a round mold with a diameter of 19 cm) Bake at 180 C for 20-25 minutes “until dry”. Turn off the oven. Cool the biscuit completely in the oven turned off so that it does not fall off.

Cut the completely cooled biscuit lengthwise into 2 layers.

Let's do the soufflé. It’s better to start making it when the cake is already in the oven, since the soufflé hardens very quickly.

For the soufflé, soak gelatin in milk and leave for 10 minutes.

We do everything in a metal bowl so that it’s convenient later.

Beat cottage cheese with sugar. Heat the swollen gelatin over low heat until dissolved. Pour into the curd mixture in a thin stream. Beat well again. Leave it in the cold. The soufflé should cool and begin to harden.

Place one cake layer in the mold in which the sponge cake was baked and brush with half the soufflé. Cover with the second cake layer and spread the cooled soufflé on top. You can decorate the top with chopped cake scraps.

Place in the refrigerator until completely set (about 1 hour is enough)

Today it is difficult to imagine life without aromatic tea with dessert. But what to do if your favorite dress can no longer be fastened, but you really want to eat something tasty? In this case, the popular diet of the French doctor Pierre Dukan, which includes a large number of cake recipes, will come to the rescue.

Today, the Dukan diet is popular in many countries around the world. Regular store-bought cooking is not suitable for weight loss. Fortunately, many dishes, including baked goods, according to the recipes of the famous doctor are offered to order in prestigious restaurants. In addition, Dukan cakes can be easily prepared at home.

Unfortunately for those with a sweet tooth, classic store-bought cakes are not suitable for the Dukan diet

At what stages of the diet can you eat homemade cakes?

Baked goods can be eaten at all stages of the diet. But for the “Attack” and “Alternation” stages, only some recipes consisting mainly of proteins are suitable. Starting with “Fixation”, almost all Dukan cakes can be safely added to your diet.

Recipes

There are many interesting recipes for making cakes for the Dukan diet.

A huge advantage of Dukan baking is its low calorie content, not exceeding 150 kcal per 100 g of product.

Cheesecake

Dukan cheesecake can be consumed from the first stage of the diet, which is called “Attack”.

  • calorie content - 97.5 kcal;
  • proteins - 11.6 g;
  • carbohydrates - 3.3 g;
  • fats - 5.4 g.
  • The most delicate curd cake with jelly will give you real pleasure on a diet.

    Ingredients for the dough:

    • 4 tbsp. oat bran, ground into flour;
    • 2 eggs;
    • 1 tsp baking powder;
    • 2 tbsp. water;
    • 3 tbsp. sweetener.

    Filling ingredients:

    • 800 g soft low-fat cottage cheese;
    • 2 eggs;
    • 10 tbsp. sweetener;
    • 1 g vanillin;
    • 2 drops berry flavoring.

    Ingredients for decoration:

    • 1 bag of hibiscus tea;
    • 2 tbsp. sweetener;
    • 1 tsp agar-agar;
    • 1 glass of water.

    Cooking steps:

  • Turn on the oven at 200 o C. Grease the baking dish with a few drops of vegetable oil.
  • While the oven is heating, prepare the dough. Separate the yolks from the whites. Beat the latter so that the foam does not flow even when tilted.
  • Combine the remaining dough ingredients and mix. Add whipped foam to the resulting mixture, stirring gently.
  • Transfer the finished dough into a baking dish, level the surface and bake in the oven for 15 minutes. Check the readiness of the cake with a toothpick: the stick must be completely dry, when you take it out.
  • While the cake is baking, make the curd filling. IN beat the ingredients until smooth.
  • When the crust is cooked, remove it from the oven, but do not remove it from the pan. Pour the curd filling onto the biscuit and smooth it out. Bake the cake again, but at a temperature of 160 o C for 30–40 minutes. Then turn off the oven, open the door slightly and let the dish sit for another ten minutes. It should harden and cool.
  • To make jelly, take agar-agar and add it to a glass of hot boiled water. Place a sugar substitute and a bag of hibiscus tea in there. Mix everything thoroughly. Heat the resulting solution on the stove. At the first sign of boiling, remove the mixture from the heat and leave to cool.
  • Remove the finished cheesecake from the oven. Then pour warm pink jelly onto the curd layer and place b place in a cool place to harden for two hours.

    "Napoleon"

    Napoleon can be consumed starting from the “Alternation” stage of the Dukan diet.

    • 50 g skimmed milk powder;
    • 20 g starch;
    • 2 tbsp. sweetener;
    • 250 ml skim milk;
    • vanillin on the tip of a knife.

    Cooking steps:

    1. Preparing the dough for the cakes. To do this, you need to beat the eggs, and then add starch, sweetener, vanillin to them and mix everything thoroughly.
    2. Let's start preparing the cakes. Divide the dough into 5 parts and fry the cakes on both sides until golden brown in a non-stick frying pan without adding oil.
    3. While the cakes are cooling, make the cream. Take a non-stick pan, pour milk into it and gradually stir in the remaining ingredients into the liquid. Cook the cream over low heat until it becomes thick. Then remove the resulting filling from the heat and let it cool.
    4. To prepare the powder, take one of the prepared cake layers. It needs to be crumbled or crushed by hand, but you can also use a blender.
    5. The time has come to assemble “Napoleon” from the previously prepared components. To do this, take a cake and spread it with cream. Continue alternating the dough and filling until the ingredients run out. Decorate the top of the dish with sprinkles. Place the finished cake in the refrigerator to soak for several hours.

    carrot cake

    Carrot cake can be consumed during the Alternation stage.

    Chemical composition of the dish per 100 g:

  • You can start eating Dukan carrot cake already at the second stage of the diet.

    Ingredients for the dough:

    • 2 tbsp. oat bran;
    • 1 tbsp. corn starch;
    • 1 medium carrot;
    • 100 ml milk;
    • 1 egg;
    • 1/2 tsp. baking powder;
    • 2 tbsp. sweetener;
    • vanillin and cinnamon to taste.

    Ingredients for cream:

    • 1/2 tsp. lemon zest;
    • 150 g soft cottage cheese;
    • 1 tbsp. sweetener.

    Cooking method:

    1. Oat bran must be ground into flour using a coffee grinder.
    2. Mix the resulting flour, egg and milk. Let the mixture sit for five minutes.
    3. Then mix cornstarch with baking powder and add them to the bran dough.
    4. Now take the carrots, peel and grate them on a fine grater. Place the resulting mass into the dough and mix.
    5. To prepare the cake, heat the oven to 180 o C. Bake the sponge cake in a silicone mold for 20 minutes.
    6. To prepare the cream, you must first grind the lemon zest on a fine grater. Then beat the curd with a mixer and add the rest of the ingredients to it. Mix the resulting cream thoroughly.
    7. Cut the cooled cake into four parts with a knife.
    8. Now let's assemble our cake. Place the cakes one at a time on top of each other, thickly greasing them with cream. Place the dish in the refrigerator for several hours.

    Chocolate cake

    Chocolate cake can be used in the Alternate stage.

    • 3 yolks;
    • 2 tsp cocoa;
    • 2 tbsp. skimmed milk powder;
    • 2 tbsp. soft cottage cheese;
    • 1 tbsp. sweetener.

    Cooking method

    1. To prepare the first cake, take 3 eggs and separate the whites from the yolks. To the latter you need to add 2 tbsp. pudding, 2 tsp. baking powder, 1 tbsp. sweetener, a little salt and beat everything until smooth.
    2. Beat the whites to stable peaks and add them to the previously obtained dough.
    3. Pour the dough into the mold and cook the sponge cake in the oven at 180 o C until a crust forms.
    4. Next, prepare the second cake using the same recipe. Set aside the baked biscuits to cool, then cut each of them lengthwise. As a result, there should be 4 cakes.
    5. To prepare the cream, mix all the necessary ingredients. If the mixture is too thick, add a little more yogurt to it.
    6. To prepare the glaze, mix all the necessary ingredients. There should be no lumps in the resulting mass.
    7. Now you need to assemble the cake. To do this, take the cake and spread it with cream. Repeat the action until the cakes are gone. Pour frosting over the top layer of the cake.

    "Bird's milk"

    The cake can be consumed throughout all stages of the diet.

    • 200 g low-fat cottage cheese;
    • 2 tbsp. gelatin;
    • 3 egg whites;
    • 1 tsp citric acid;
    • 2 tbsp. sweetener;
    • vanillin on the tip of a knife.

    • 1/2 cup skim milk;
    • 4 tsp cocoa;
    • 1 tsp gelatin;

    Cooking method

    1. To prepare the crust, take the eggs and separate the yolks from the whites. Beat the last ones to peaks. Add all other dough ingredients to the yolks and mix. Carefully pour the resulting mixture into the beaten egg whites.
    2. Cover the form with parchment paper, pour the dough into it and place in the oven, preheated to 180 o C, for 12 minutes. Then take out the cake and separate it from the paper.
    3. To prepare the soufflé, add citric acid to the egg whites and beat the mixture until stiff.
    4. Pour gelatin over milk and heat the liquid in a water bath (or in the microwave).
    5. Beat cottage cheese with sweetener and flavoring. Then pour the cooled gelatin into the resulting mass and beat again. Place the mixture in the refrigerator for 5 minutes.
    6. Remove the cooled cream and beat until the mixture doubles in size. Then carefully add the whipped egg whites and sweetener to the cottage cheese. Cover the biscuit base with the resulting cream. Place the cake in the refrigerator for 40 minutes.
    7. All that's left to do is make the chocolate glaze. Add gelatin to three tablespoons of milk and wait until it dissolves.
    8. Heat half a glass of milk on the stove along with cocoa, add sweetener and cool the liquid slightly.
    9. Mix the cocoa with the gelatin mixture, cool and frost the cake over the soufflé. Place the finished dish in the refrigerator for final hardening.

    "Honey cake"

    • 450 ml skim milk;
    • 4 yolks;
    • 3 tsp starch;
    • 2 tbsp. sweetener.

    Cooking method:

    1. Fry the milk powder until golden brown and grind.
    2. Mix skim milk powder with other dry ingredients for the dough.
    3. Separate the yolks from the whites. Add yolks and flavoring to the dry dough ingredients.
    4. Pour salt into the whites, beat them to stiff peaks and add the resulting foam to the dough.
    5. To prepare biscuits, you need to divide the resulting mass in half. Place one part in the oven, preheated to 180 o C, for 20–30 minutes. Place the other half in the refrigerator. After finishing baking the first cake, put the second one in the oven and bake it according to the same principle. Cut each biscuit lengthwise into two parts.
    6. Let's move on to making the cream. Divide the milk in half, heat one part over low heat, and add all the remaining cream ingredients to the second and mix. When the first portion has become warm, pour it into the second and heat the mixture again until the cream thickens.
    7. To assemble the cake, alternate between layers and filling until you run out of ingredients.

    "Anthill"

    The cake can be consumed on the Dukan diet starting from the “Consolidation” stage.

    Ingredients for the crust:

    • 80 g oat bran;
    • 40 g gluten;
    • 20 g soy isolate;
    • 4 g baking soda;
    • 2 g ground nutmeg;
    • 2 g citric acid;
    • 90 g skimmed milk powder;
    • 2 eggs;
    • 200 ml low-fat kefir;
    • 5 tsp sweetener.

    Ingredients for cream:

    • 400 ml skim milk;
    • 8 tsp sweetener;
    • 20 g corn starch.

    Cooking method:

    1. For the dough, combine bran, nutmeg, citric acid and gluten. Add eggs, kefir and sugar substitute to the resulting mixture. The dough should have a sour cream consistency.
    2. Place the dough on a baking sheet covered with parchment paper. The cake is prepared at 180°C for 30 minutes.
    3. After cooling, the dough needs to be crumbled.
    4. To prepare the cream, place 200 ml of milk on the stove to warm up. Mix the remaining 200 ml with starch and sweetener. Gradually add cold milk to the warm milk, stirring constantly. Bring the cream until thick. Be careful not to let the liquid boil
    5. All that remains is to assemble the cake. Mix the crushed cake with cream. We form a slide from the resulting mass on a plate. Place the cake in the refrigerator for an hour.

    “Dream” in a slow cooker

    The cake can be consumed on the Dukan diet starting from the “Alternation” stage.

    Chemical composition of the dish per 100 g:

  • calorie content - 135 kcal;
  • proteins - 14 g;
  • fats - 3.5 g;
  • carbohydrates - 12 g.
  • The “Dream” cake can be decorated with berries and cookies on top, but it is better to give these pieces to loved ones and eat a portion without decoration yourself

    Biscuit ingredients:

    • 4 eggs;
    • 6 tbsp. skimmed milk powder;
    • 2 tbsp. starch;
    • 1 tbsp. sweetener;
    • 1 tsp baking powder.

    Ingredients for cream:

    • 300 g soft low-fat cottage cheese;
    • 100 ml skim milk;
    • 1.5 tsp. gelatin;
    • 2 tsp cocoa;
    • a couple of drops of pink food coloring;
    • 1 tbsp. sweetener.

    Cooking method:

    1. Separate the yolks from the whites. Add salt to the last ones and beat them to peaks. Carefully add the yolks to the whites. Then pour dry milk, corn starch, baking powder and sweetener into the mixture.
    2. Lightly grease the multicooker pan with oil, pour in the dough and turn on the “Bread/Baking” mode for 40 minutes. Cook the crust for 25 minutes on one side and 15 on the other.
    3. To prepare the cream, soak gelatin in milk until dissolved. Add the resulting liquid to the cottage cheese. Add sugar substitute to the mixture and mix well. Place a few tablespoons of cream in a separate container. Mix the main mixture with cocoa and place in the refrigerator to harden.
    4. When the cake is ready, let it cool slightly. Then cut the biscuit lengthwise into 4 parts.
    5. Add food coloring to the reserved cream.
    6. Assembling the cake: alternate sponge cake and cream until the ingredients run out. Cover the top layer with pink glaze, which was made by mixing the curd mass with dye. All that remains is to put our cake in the refrigerator overnight so that it soaks.

    Red Velvet Cake is a truly feminine dessert, as its sponge cake is very soft and the cream has a delicate yogurt consistency. You can eat the dish on the Dukan diet starting from the “Consolidation” stage.

    • 1 tbsp. soy isolate;
    • 1 tbsp. gluten;
    • 1 tbsp. sweetener;
    • a pinch of vanillin;
    • a pinch of salt;
    • 1/2 tsp. baking powder;
    • 2 tbsp. red food coloring;
    • 2 eggs.

    Ingredients for cream:

    • 4 glasses of skim milk;
    • 4 egg yolks;
    • 2 tbsp. sweetener;
    • a pinch of vanillin.

    Cooking method

    When you get acquainted with this food system for the first time, it seems that you will eat only meat, meat, then fish, eggs and meat again. And sometimes vegetables. But that's not true. Over time, having studied all the permitted products and supplements, you begin to come up with various options to somehow brighten up the circumstances. This Dukan cake recipe confirms this. You'll have to tinker, but the result is worth it!

    The fluffy Dukan sponge cake turns out to be very tender, with a subtle nutty aroma. All you need is a couple of eggs, cottage cheese, and allowed corn starch. It also makes the finished sponge cake soft, moist and very fluffy. But this thin biscuit turns out to be especially tasty: and all thanks to toasted milk powder and flax seed - also additional permitted products - and the very pleasant “Walnut” food flavoring. However, everything is in order.

    “Nut” recipe according to Dukan for Alternation.

    We will need the following products:

    For the test:
    • Divide three chicken eggs into whites and yolks. Plus 1 egg separately.
    • 200 ml low-fat kefir.
    • Sweetener.
    • 2 tablespoons isolate.
    • 2 tablespoons skimmed milk powder (SMP) - 1 ADDITIONAL.
    • 2 tablespoons oat bran flour (OO).
    • 1 level tablespoon.
    • 1 tablespoon of ground flax seeds (you can do without them) - 1 ADDITIONAL.
    • 1 teaspoon baking powder (Important!).
    • Walnut flavor.
    For cream:
    • 400 ml of milk 1.5 fat content and below.
    • 3 yolks.
    • 1.5 tablespoons cornstarch - (1.5 DOPA).
    • Sweetener FitParad.
    • Flavor Baked Milk (optional) or Vanillin on the tip of a knife.

    First, let's make crumbs from powdered milk. This method will also be useful to you later, when you decide to make the so-called “boiled condensed milk” according to Dukan - a very tasty sweet. So get your teeth into it, especially since there is nothing complicated.

    So, on a Teflon or any other reliable non-stick frying pan, throw two level spoons of skimmed milk powder (the abbreviation for the price is bird - catfish). And immediately start stirring with a spatula. The milk will “fry” very quickly, so you need to avoid burning. As a result, you will get light and dark brown crumbs. Don't let it go black! Turn off the pan. Pour the resulting crumbs into a coffee grinder or blender and grind to a powder.

    Dukan custard cream for cake and more - a universal recipe.

    First prepare the custard. Bring the milk until hot (not boiling). Add cornstarch to the yolks and stir with a spoon or whisk. Use a ladle to scoop up the hot milk and pour it into the mixture in a thin stream (do not stop stirring). Then another ladle. You will get a yellow liquid mass in a separate container. Then pour this mixture in a thin stream into the milk, which is heating on the stove, without ceasing to stir the milk itself. It's better to do this with a whisk.

    At first the liquid will be normal, as it was. But gradually, as it heats up, it will become thicker and thicker until it becomes like semolina porridge - dense and viscous. At the end, sweeten and add the desired flavors: baked milk or vanilla. Turn it off and let it cool. This is how any custard is made on Dukan with dopas (corn starch).

    Cakes for nut cake.

    Beat 3 egg whites until stiff and set aside. Three yolks will go into the cream for the cake. Separately, take 1 egg and kefir, stir well. Add dry ingredients, including baking powder, flavoring, sweetener and whisk well to combine.

    Then, using a spatula - silicone or wooden - gently stir in the egg whites and dough.

    Form a circle of dough on the mat and place in an oven preheated to 180 degrees. Bake until golden brown. You will get 2 or 3 cakes.

    When the cakes have cooled slightly, cut them into 4 pieces. And assemble the cake, coating each layer with the resulting cream. You can additionally soak them in delicious syrup, but this is optional. I make this Dukan cake very often and divide it into several parts according to additional parts, enough for 2 days.

    Separate the whites from the yolks. Grind the yolks with baking powder, corn starch, cinnamon and oat bran flour. Add a few tablespoons of honey. Beat the whites into a thick foam with a mixer for 7 minutes.

    Add the tightly beaten whites to the yolk mixture and mix gently until completely homogeneous. Take a deep mold and grease it with oil. Pour the dough into the mold and place in the oven preheated to 170 degrees for 10-15 minutes. Cool the finished cake, cut it into 3 parts.

    Now let's start preparing the cream. We take good (preferably homemade) cottage cheese. We take out the sweetener tablets and dissolve them in a small amount of boiling water. Combine cottage cheese with sweetener and three tablespoons of cornstarch. Add vanilla. Beat with a mixer until creamy and put in the refrigerator for half an hour.

    Now we take out a wide plate and place the first cake layer. Spread curd cream. You can also add nuts, dried fruits or berries. I'll add some candied fruit. So we collect 3 cakes, spreading cream on each one. Leave the most cream for the top layer. Sprinkle cocoa or grated dark chocolate on top. The Dukan cake is ready. Enjoy your diet!

    Preparation

    Let's start cooking Dukan cake from a biscuit.

    Separate the whites from the yolks. Mix oat and wheat bran. Mix all dry ingredients with yolks. Pour kefir into the dough. Mix or beat everything thoroughly.

    Beat the whites with a pinch of salt to strong peaks. There should be a spoon in the whites - until this state you need to beat the whites. Gently fold the whites into the dough so that they do not fall off.

    Preheat the oven to 180 C. Pour the dough into a large mold, or bake two cakes in turn. I have two identical molds, I bake two cakes at the same time. Bake until dry for 30-35 minutes. Cool in the switched off oven.

    Cut the completely cooled cakes in half lengthwise. In total you should get 4 identical shortcakes.

    For the cream, beat all ingredients until fluffy.

    Everything is ready, it's time to assemble the cake. We soak the first cake with impregnation. Lubricate well with cream. And so on - soak and lubricate. We do not grease the top cake with anything yet.

    Now let’s make sure the cake is even. Place a cutting board on top of the folded cake and apply slight pressure for 5-10 minutes. During this time, all the cakes will stick together.

    Remove the pressure and grease the top and sides of the cake with the remaining cream.

    Leave the cake to soak in the refrigerator. It's better to leave it overnight.

    As a result, we get juicy and very tasty Dukan cake!
