  2. Pour boiling water over the raisins and leave for 20 minutes, then drain the water and dip the raisins in flour.
  3. Mash the cottage cheese well together with two types of sugar to obtain a soft mass without lumps, add salt.
  4. Separate the yolk and white, beat the yolk into foam and add to the cottage cheese, and leave some for greasing. Set the white aside.
  5. Add raisins and salt to the cottage cheese, mix everything well.
  6. Roll out the dough into a 4-5 ml layer and cut into equal square or rectangular pieces.
  7. Place the filling in the center of each piece, brush the edges with egg white and press together to form envelopes.
  8. Brush the top of each puff pastry with yolk.
  9. Cover a baking sheet with parchment paper and grease with vegetable oil.
  10. Bake the puff pastries for 20-25 minutes at a temperature of 180-200 ⁰C.

Cool the finished puff pastries and sprinkle with powdered sugar.

Recipe for puff pastries with cottage cheese and lingonberries

Required ingredients:

  • Yeast puff pastry – 600 gr.
  • Cottage cheese – 550 gr.
  • Egg – 2 pcs.
  • Sour cream – 30 gr.
  • Sugar – 2-3 tbsp. l.
  • Lingonberries – 150 gr.
  • Apples - 3 pcs.
  • Vanillin – 10 gr.
  • Sunflower oil – 2 tbsp. l.

Cooking method:

  1. Remove the dough from the freezer 30 minutes before rolling out.
  2. Grind the cottage cheese with sugar and vanilla, add one beaten egg, sour cream, mix everything.
  3. Cut the apples into small strips, add to the cottage cheese, then the washed lingonberries.
  4. Roll out the dough into a layer and cut into equal rectangular pieces.
  5. Place the filling in the middle of each piece, brush the edges with egg white and secure together to form envelopes. Lightly beat the yolk and brush each puff pastry with it.
  6. Transfer the pieces to a baking sheet lined with paper and greased with oil.
  7. Bake in a preheated oven to 190-210⁰C for 15-20 minutes.

If desired, sprinkle the finished puff pastries with powdered sugar.

Layer pie with apples

Even those who have never baked before can cope with the recipe perfectly. Try it, your loved ones will like it.

Ingredients:

  • puff pastry – 2 sheets
  • curd mass – 400 gr.
  • raisins – 0.5 cups
  • chicken egg – 1 pc.

Recipe for making puff pastry with cottage cheese:

You can make puff pastry yourself. But we bought ready-made frozen puff pastry without yeast in the store. It's already cut into squares, so all we have to do is defrost it and roll it out. Please note that puff pastry defrosts very quickly, in about 15 minutes. As soon as it becomes soft, start working immediately, as this dough does not like to be kept warm for a long time.

Lightly flour the table and place a square of prepared puff pastry. Sprinkle the rolling pin with flour too. Roll out the dough. The square should increase by half, the dough will be thin. Don't worry, it will rise and spread well in the oven. Now use a sharp knife to cut the dough into 4 parts as shown in the picture. The dough is thin, elastic, and cuts very easily.

It's time to prepare the filling. Rinse the raisins, soak in water for a while, then dry on a napkin and combine with the curd mass. Mix well - the filling is ready.

Place the filling in the center of each of the four squares. Now you need to brush the edges of the squares (future puff pastries) with egg white. To do this, you need to carefully separate the white and yolk. Tap the center of the egg with a knife, break the shell into two halves and roll the yolk from one shell to the other. Meanwhile, all the protein will pour into the cup. There is no need to beat the whites. Just take a regular pastry brush and brush the egg white onto the edges of the squares.

Now form triangular dough puffs by covering one half of the square with the other half. Lightly press down the top half of the dough, pressing down the filling and expelling excess air. Pinch the edges well with your fingers.
