I love red currants for their usefulness, bright color, pleasant taste and aroma. They help decorate and harmoniously complement any baked goods. Yesterday I made puff pastries with red currants for my family. The result exceeded all expectations, and the pan was empty in a couple of minutes. It’s good that I had a camera at hand in the kitchen and I managed to photograph the result, as well as the process, to illustrate the recipe. I am sharing a very simple and quick recipe for baking in the oven with step-by-step photos taken.

So, we need:

— red currants — 75 grams;
- sugar - 1-2 tbsp. spoons;
- starch - 1 tbsp. spoon;
- puff pastry (ready) - 150 grams;
- powdered sugar - to taste;
- vegetable oil (refined) - for lubricating the mold;
- premium wheat flour - for dusting the table.

How to make puff pastry bagels with red currants

Sprinkle the finished puff pastry with premium wheat flour and place on the table. I take commercial dough, which is sold in any store.

To fill the bagels we take red currants, starch and granulated sugar. Currants can be used fresh or frozen. I have the second option. There is no need to defrost it in advance.

Mix berries with sugar and starch. Starch will allow the juice of the berries, which will be released during cooking, to be preserved inside the bagels.

Roll out the finished puff pastry into a thin round layer. Cut it as shown in the following photo.

This amount of dough will make eight small bagels. Place the filling on the wide end of the dough, 1-2 teaspoons at a time.

Roll the bagels, starting from the wide edge. Secure the thin tip of the bagels so that they do not unroll.

Line a baking sheet with baking parchment or foil. I have foil, which I greased with odorless vegetable oil. Place bagels on a baking sheet.

Place the puff pastries in the oven. Bake at 175 degrees for about 15-20 minutes. Baking time will vary depending on the size of the baked goods and the features of your particular oven.

Bake them until lightly golden. Let the finished puff pastries cool slightly before removing them from the baking sheet. Then, you can transfer the baked goods to a plate.

Sprinkle powdered sugar on top. Snow-covered airy bagels with red currants will bring pleasure.

A few days ago, I was surprised to learn that tender and incredibly tasty puff pastry bagels with filling can be easily prepared at home - until now I firmly believed that these magical products are available only to those who have professional culinary equipment.

A friend came to the rescue, who, as it turned out, had been baking puff pastries for a long time according to a recipe from an old Soviet cookbook, where you can see the full step-by-step process with a photo of the finished product.

After rewriting this guide and starting baking, I realized that even a child can make these cookies!
Today I am happy to share with you a recipe for puff pastry bagels with jam or jam, so that you can prepare this tender, very tasty and aromatic delicacy for your family.

Select all the necessary utensils, tools and equipment for successfully baking bagels from puff pastry according to a simple recipe: a standard baking sheet with a non-stick coating (do not use simple frying pans) with a diagonal of 25 cm, several large bowls with a capacity of 350 to 750 ml, parchment paper (cut, to fill the baking tray), a piece of plastic wrap about 30 cm long, teaspoons and tablespoons, a measuring cup or kitchen scale, linen and cotton towels, oven mitts, a fine sieve and a steel whisk.   3. We divide the rolled out layer crosswise, and after that we cut each square into two more equal halves diagonally. We should get 8 equal triangles. We do the same with the second sheet of dough.

  4. Place 10-12 g of jam on the wide part of the triangle and wrap the dough in a bagel.

  5. Place the formed product on a baking sheet, previously greased with 10-12 ml of vegetable oil. In the same way we make the remaining bagels and place them on a baking sheet.

  6. In a small bowl, beat the egg using a whisk or a regular fork.

  7. Then generously brush the surface of the products with the egg mixture.

Let's prepare the dough

  1. Sift 650-700 g of flour into a deep bowl through a fine sieve.

  2. Add 15-18 g of dry yeast, a pinch of salt, and 30-45 g of sugar.

  3. After this, pour in 200-215 ml of yogurt, 50-55 ml of sunflower oil and break two eggs.

  4. At the first stage, mix the ingredients with a spoon, and then continue kneading by hand until a non-stick, homogeneous mass is obtained.

  5. Lightly coat the finished dough with 10 ml of sunflower oil so that during swelling it does not stick to the walls of the bowl. Cover the dough with a towel or plastic wrap and place it in a very warm place for an hour or two to rise properly.

  6. Knead the risen dough a little with your hands and form it into a sausage, and then divide it into six equal parts.

  7. We take one piece of dough, make a flat cake out of it with our hands, and then roll it into a round layer 5 mm thick.

  8. Grease the surface of the cake generously with softened butter.

  9. Roll out the second piece of dough and place it on top of the greased flatbread, then also grease its surface with oil.

  10. We do the same action with the remaining cakes, placing them one on top of the other and greasing them with oil. However, do not butter the surface of the last tortilla!

  11. Sprinkle a flat surface with flour and place our stack of flat cakes on it, which we roll into one round thin layer using a rolling pin.

  12. We divide the resulting layer into four equal parts (crosswise) using a sharp knife, and after that we divide each part into four more equal triangles. In total we should get 16 equal triangles.

  4. Then we divide it into 12 equal triangles.

  5. In a separate bowl, mix 10-15 g of sugar and 10-15 g of cinnamon. Sprinkle each triangle of dough evenly with the cinnamon-sugar mixture.

  6. Melt 45-50 g of butter in the microwave.

  7. Dip an apple slice into a bowl of melted butter and place it on the wide part of the triangle.

  8. We wrap each piece of apple in the dough, forming a bagel.

  9. Place the formed product on a baking sheet previously covered with baking paper.

  10. Beat the egg with a whisk and brush the surface of the bagels with the resulting mixture so that the baked goods acquire a golden hue.

Bagels filled with thick jam or marmalade are an excellent treat for the whole family. Everyone loves bagels - both adults and children; they go perfectly with a cup of aromatic coffee in the morning, and in the evening, in the family circle, while drinking tea, they will be very useful. They are prepared from yeast dough, shortbread, but the fastest and easiest way to make them is from puff pastry. - a glass of thick jam or jam;
- 2–3 tbsp. flour for dusting;
- 1 chicken yolk;

In the evening, transfer the puff pastry from the freezer to the refrigerator and let it thaw gently. If there is no time to defrost, remove the dough from the freezer and place it on a floured work surface. Lightly sprinkle the top of the dough sheets with flour and cover with cling film so as not to dry out. After about 1 - 1.5 hours, the dough will defrost and be ready for use.





On a lightly floured work surface, carefully roll out the dough into a layer, the thickness of the rolled dough is approximately twice as thin as the thickness of the workpiece. Roll out the dough, moving in one direction so as not to disturb the layers. We cut the rolled out dough into small triangles, the width of the base is approximately 10 cm, the height is 13 - 14, be guided by the size of your layer.





We disassemble the triangles, separating them from each other.





Place about 1-1.5 teaspoons of marmalade or jam on the base of the triangle.







And roll it into a neat, tight bagel.





Place the bagels on a baking sheet lined with parchment (or a silicone mat), seam side down.





Cover the bagels with cling film and place in a warm place to proof for 30 minutes. Pour the chicken egg yolk into a small bowl and beat lightly with a fork, add a couple of teaspoons of water and mix well. Preheat the oven to 200 degrees C. Using a pastry brush, brush the surface of the bagels with yolk and sprinkle with sugar.





Place the baking sheet with bagels in the oven and bake for about 15 minutes, until beautifully golden brown.







If you want to bake bagels at a temperature of 180 degrees, this will take about 20 minutes. Ready bagels can be served immediately, warm. Pay attention to this one.





But even when cooled down, they are simply great!

Tips and tricks:
If you do not have thick jam or jam, simply place the existing jam in a saucepan with a thick bottom and cook it, stirring occasionally, over very low heat until the required thickness is achieved.
If you do not use jam or jam, but preserves, first puree it with a blender so that there are no large pieces. If necessary, also reduce the jam to the desired thickness.
Boiled condensed milk can also be used as a filling.

First, let's look at a recipe for economical bagels made from yeast dough. They contain no dairy products or eggs. Therefore, they can be called lean or vegetarian.

Procedure:

  1. Dissolve yeast in warm water, dissolve sugar and a pinch of salt. Let stand in a warm place for 15 minutes for the yeast to “wake up”.
  2. Pour 1.5 cups into a bowl. flour. Add water with yeast and oil in small portions, mixing thoroughly.
  3. Gradually add the remaining flour. When the dough becomes thick enough, place it on the table and chop it with a knife while kneading. There is no need to give him special time to approach. The bagels should not be fluffy, but crispy.
  4. Divide the homogeneous soft dough into 3 parts. Roll each into a round pancake no more than 5 mm thick.
  5. Cut each pancake into 8 triangular pieces, like a cake.
  6. Place a teaspoon of jam on the wide part of the triangles. Seal the edges, otherwise it will leak when heated. Wrap it in a bagel.
  7. Grease a baking tray or line it with baking paper.
  8. Place the bagels on it and bake at 200°C until golden brown.

Layered bagels with jam

Soft and tender bagels made from homemade yeast puff pastry. Grocery list:

  • Flour - 3 cups.
  • Milk – 1 cup.
  • Sugar – 0.5 cup.
  • Dry yeast – 1 tsp.

  • Butter – 100 g.

  6. Mentally divide into 3 equal parts, but do not cut, just make marks with the non-sharp side of the knife.
  7. Lightly grease the middle part with butter.
  8. Cover the middle part with the left part, also spread on top and cover with the right part on top. Sprinkle with flour and roll out into a layer no more than 1.5 cm thick. Use a brush to brush the flour off the surface.
  9. Repeat steps 6 to 8 until the oil runs out. Wrap the dough in film and refrigerate for half an hour.
  10. Divide into 2 halves. Roll each into a circle. Cut it like a pizza, into equal triangles. Place a spoonful of thick jam at the base of each. Blind the edges so that it does not leak out. Roll the triangle into a bagel.
  11. Place bagels on a greased baking sheet. Cover with a cloth and let stand for 20 minutes. for lifting.
  12. Preheat the oven to 200°C. Beat the yolk with a spoonful of milk and brush the bagels. Bake until golden brown.

Sprinkle slightly cooled bagels with powdered sugar and serve. Store in a paper bag, then they will retain their softness for several days.
