We will need:

  • 4 ripe large bananas
  • 2 tbsp. spoons of hazelnuts
  • 2 tbsp. spoons of honey
  • 1 tbsp. spoon of fresh lemon juice

Cooking method:

  1. Roast the hazelnuts, cool and grind them in a food processor or a regular mortar, but not too finely. What we should get is not sand, but pieces that can be felt by the teeth.

In the summer, before serving, the dessert can be cooled in the refrigerator, but in the winter, when frost creeps into the very soul, it is better to serve the puree “hot from the heat” with still hot bananas and warm nuts. We will need:

  • 5 medium bananas
  • 50 grams butter

Cooking method:

Then remove the pan from the heat and leave to cool until the dough reaches room temperature. Add 1 egg to the cooled dough, mixing each one well with the dough. The process of mixing eggs with dough is quite labor-intensive, but using a mixer is not recommended.

Place the resulting dough in a pastry bag for baking; you can use almost any attachment, but it is better to give preference to the “large open star”. Cover a baking sheet with parchment film and squeeze out the rings.

Place in the oven preheated to 180˚C for 10 minutes. Next, you need to reduce the temperature to 160 and leave to bake for another 15 minutes. It is forbidden to open the oven during cooking. Remove the baked rings from the oven and leave to cool.


While the rings are cooling, you should prepare the cream. Pour cream into a deep plate, add sugar. Using a mixer turned on at medium speed, beat until a thick, homogeneous mass is obtained. This may take up to 5 minutes.

Cut the cooled rings lengthwise into two halves and fill with cream using a pastry bag, connecting the two parts of the ring. You can only use one attachment. The finished cakes should be left to cool in the refrigerator and sprinkled with powder before serving. If desired, you can prepare it for custard cakes.

  • It is better to bake thin cake layers not on the baking sheet itself, but on baking paper. This way the cakes don’t break and are easy to remove from the baking sheet.
  • After baking, the biscuit should cool well. If you try to cut a warm or hot sponge cake, the cakes will wrinkle.
  • Before whipping the cream, cool it well. The cream must be fresh and have a fat content of at least 30-35%. Low-fat cooking cream is not suitable for whipping.
  • Whip the cream with a frame mixer. Cream is considered well whipped if its mass has increased several times and at the same time holds well on the broom.
  • For Tiramisu cake, expensive mascarpone cheese can be replaced with whipped cream with sugar.
