Ingredients:

  • 2 cups wheat flour
  • 1 cup semolina
  • 1 cup sour cream
  • 1 cup of sugar
  • 100 g butter
  • 50 g raisins
  • 3 eggs
  • 1 orange
  • 1 tsp. baking powder
  • a pinch of salt

How to cook manna with sour cream:

Combine semolina with sour cream. Mix the mixture thoroughly and leave to swell.

Break three chicken eggs into a deep bowl. Add granulated sugar to them.

Stir and beat the mixture with a mixer until it lightens and increases in volume.

Cut the butter into small pieces. Melt the butter on the stove or in the microwave.

Wash the raisins and pour boiling water over them. Let it swell for 10 minutes.

  • 100 g of cow butter (if it is absent - 5 tbsp. vegetable oil);
  • ½ tsp. soda;
  • cinnamon, cardamom, vanillin - optional.

Preparation

  1. Pour semolina into a deep container and fill it with kefir. Set the bowl aside for 10 minutes.
  2. While the cereal is swelling, melt the butter, cool slightly and pour into the prepared mixture.
  3. Add soda, sugar, a pinch of salt, spices and mix.
  4. Sift flour into the dough. Mix with a whisk.
  5. Prepare the baking dish by greasing it thoroughly. Pour the workpiece into it.
  6. Bake in an oven preheated to 200⁰C until done (about half an hour).

Lenten manna on water without eggs

During Lent, I also want to please myself and my loved ones with something sweet. An excellent option in this case would be lean manna on the water.

Ingredients

  • 1 cup semolina;
  • 1 glass of water;
  • ½ tbsp. premium wheat flour;
  • 1 cup crystal sugar;
  • ½ cup vegetable oil;
  • 1 tsp. baking soda (or a packet of baking powder);

Compound:

  • 1 glass of semolina;
  • 1 cup granulated sugar;
  • 300–400 g of cottage cheese;
  • 100 g low-fat sour cream;
  • 1 tsp. baking powder (or soda);
  • orange zest or vanillin - optional.

Preparation

  1. Transfer the sour cream into a suitable container. Add semolina there too. Mix thoroughly and let sit for 40 minutes.
  2. Grind cottage cheese with sugar.
  3. Pour the mixture into a container with semolina. Add baking powder. Knead with a spoon.
  4. Grease the prepared pan with margarine or butter. Pour the dough into it.
  5. Bake the piece at 190⁰C for approximately 40 minutes.

If you don’t have sour cream in the house, you can replace it in the dough for manna with 1 glass of kefir. According to the recipe, it is advisable to add 100–150 g of butter and 1 cup of flour. The cooking and baking process for this type of dessert is the same as in the described version.

  1. To make the baked goods juicy, you can pour milk over the hot dish. This will make the dessert even more tender.
  2. For additional taste and aroma, you should add vanilla, citrus zest, cinnamon powder, nuts, dried apricots, raisins or candied fruits to the dish.
  3. You can put bananas or grated pumpkin in the dessert preparation. The taste of the dish will be unique.
  4. It is prohibited to pour boiling water over semolina. So it will cook.
  5. Thick dough can be diluted with kefir or milk. In extreme cases, you can use warm water.
  6. To prepare manna in the microwave, you need to set it to the highest power and send the dough there in a glass or silicone form. Baking time will only take 6–8 minutes.

1. Preparing dough for manna

Mix eggs with sugar
We take 2-3 eggs, break them into a bowl, into which we add a glass of sugar (we took a little less, namely a little more than half a glass). Using a fork or mixer, beat the sugar-egg mixture until white foam forms.

Create a mixture of semolina and sour cream
In a separate bowl, mix a glass or package of sour cream (250g), add 1 glass of semolina. Stir and let sit for 30 minutes so that the semolina swells.

We combine the resulting mixtures
Combine sour cream with semolina with beaten eggs and sugar. Stir until a homogeneous mass without lumps is obtained.

Add flour and soda
Now to our dough you need to add 1 cup of sifted flour and ½-1 teaspoon of baking soda or any other baking powder to give our sour cream manna a porous structure.

When using baking soda, I advise you to proceed from the principle that less is better than more. Since it is very easy to spoil the taste of the dough (and subsequently the semolina pie) with its excess.

And while the oven is heating up, leave it for 15-20 minutes to let it brew.

The resulting dough should be slightly thicker in consistency than pancake batter.

Most operations, such as mixing and whipping, can be done using a specific mixer or food processor; it is not necessary to do everything manually.

2. Bake manna with sour cream

About 15 minutes before putting the cake to bake, turn on the oven at 180°C to warm up.

Take a baking dish, or just a frying pan with a removable handle (the recipe used a regular aluminum frying pan), which you can put in the oven and grease the surface with butter or vegetable oil.

Pour the dough(or put it with a spoon) into the selected container for the final preparation of the manna.
And place in a preheated oven for 40 minutes.

After this time, remove the pie and cover with a towel.
After 10-15 minutes, you can enjoy a piece of tender manna with sour cream.

How can you diversify a manna recipe?

1. We dilute the semolina with sour cream and let it swell (from ½ hour).

4. Prepare the syrup by mixing pumpkin juice with apple or orange juice. You need 100 ml of juice mixture to come out. Add lemon juice, cinnamon and sugar to this. Boil all this quietly for 5 minutes.
