– a fermentation product of ripe apples, from which the liquid receives a set of organic acids, vitamins and microelements. They determine the widespread use of apple cider vinegar for cosmetic, medical and household purposes.

The bacteria involved in fermentation produce acid and carbon dioxide. If the process is interrupted, the result is a low-alcohol drink. But when the cider is allowed to finally ferment, all the sugar contained in the apples turns into a complex of organic acids that determine the taste and smell of the product. Vitamins, enzymes, pectins and mineral salts pass from the fruits into the liquid.

The maximum of useful substances is preserved in unrefined, cloudy vinegar, which retains some of the fruit's fiber, which is clearly visible when a small, completely acceptable sediment is formed.

Perhaps you used it to rinse your hair to make it shine, or wiped your body with a solution of vinegar and water to bring down a high fever, or maybe you applied it to the site of an insect bite.

But the health benefits of this interesting substance do not end there. In fact, there are so many beneficial properties of vinegar, especially apple cider vinegar, that I decided to devote a special article to it.

After reading the article to the end, you will understand that apple cider vinegar should take pride of place in the home medicine cabinet of alternative folk remedies. In any case, our ancestors considered it almost a panacea.

A little history

For thousands of years, people have widely used vinegar (sour wine) as a flavoring agent, medicine and cosmetic. Mentions of it are found in almost all ancient texts, from the Bible to magic spells, including ancient Greek, Roman and Egyptian texts. During the Great Plague in the Middle Ages, not a single doctor went to see patients without using vinegar to disinfect their hands.

In Ancient China, they also knew the healing properties of vinegar, although its source was rice, as it is now. In Japan, vinegar is made from brown (unpeeled) rice. It is credited with amazing properties of preserving youth, strength and health. A well-known samurai recipe. It's called Tomago-su. Take a fresh egg, dissolve it in a glass of rice vinegar and leave it for a week. The egg, or rather its shell, dissolves completely, with the exception of the transparent membrane. Now you need to break through this membrane and mix the contents with vinegar. The magic drink is ready, and all you have to do is take it three times a day in small doses, mixed with warm water.

In the Roman army, legionnaires diluted it with water to quench thirst under the burning sun and prevent infectious diseases. In Ancient Egypt, they lubricated wounds and used it in cooking. The Egyptians made wine and vinegar from figs. The Egyptian queen Cleopatra considered it the most important remedy for health and beauty. There is a known fact when Cleopatra wins a bet, promising Mark Antony that she will treat him to the most expensive dinner. She dissolves a huge pearl in a goblet of vinegar and drinks it. In India, to this day, the most popular source for making vinegar is palm sap. But everywhere it is noted as a medicine for healing wounds, burns, bleeding, snake bites, gangrene, fainting, and is even credited with the ability to resolve solid tumors - fibroids and cysts.

Vinegar can be grape, rice, raspberry, pear, etc. But the most interesting in terms of health benefits is apple cider vinegar. And that's why. In America, the so-called Vermont diet is very popular. It is about as famous there as the Mediterranean is in Europe. Residents of Vermont enjoy amazing health and longevity. Scientists, of course, became interested in this, and the result was more than surprising. The only thing that distinguishes Vermonters from other Americans is that they really love... apple cider vinegar. This is a real cocktail of useful microelements: in total there were more than 30 important vitamins, enzymes and pectins - heart protectors.

An English proverb says: “He who eats an apple a day never sees a doctor.”

Currently, under medical supervision in clinics in the United States and Japan, apple cider vinegar is even used to treat gastritis, otitis media, and also to disinfect hospital surfaces. The most common dose for a healing effect is one coffee spoon of vinegar and the same amount of honey, diluted in warm water, half an hour before meals, 2 times a day. This dose is prescribed even for people with high acidity. Cheap and cheerful, and also very tasty. But do not try to increase the dose to speed up the healing process.. Instead of benefit, you can cause irreparable harm. In addition, you cannot use low-quality cheap vinegar, the production of which uses accelerated fermentation methods. This vinegar won't do any good either.

You can try making vinegar at home if you have the desire and time. Unpeeled apples are cut into large slices and left for some time so that they darken. Then the juice should be squeezed out of the resulting mass. It is poured into a glass or ceramic container, and a rubber balloon is pulled over the neck, which will stretch as fermentation proceeds. The container should be in a very warm place (25-26 degrees C). The fermentation period can range from one to six weeks.
Now you need to pour this alcoholic drink into a wide salad bowl, cover with a cloth and leave for secondary fermentation.
It is advisable to now add vinegar matka, which is a foamy mucous film of yeast-like fungi that appears on the surface of the fermenting juice. This film itself has active healing properties that are three times greater than the healing properties of vinegar itself.
Handling the vinegar mother must be very careful, because the bacteria are sensitive and can easily die if the fermenting drink is disturbed, for example, by moving it from place to place. You can do without it, but then the process will drag on for several months.

Often, towards the end of the “ripening” of the vinegar, a sediment forms at the bottom of the jars. The liquid is poured into bottles, being careful not to disturb the settled impurities. That part of the apple cider vinegar where sediment remains is filtered through cheesecloth and also poured into a common bottle. Homemade apple cider vinegar should be stored hermetically sealed at room temperature.

Here's a more detailed recipe.
High-quality homemade vinegar is obtained from sweet apples. It is advisable that they be grown in your own garden or country house and not treated with toxic chemicals. The ideal option is overripe fruits. Even those that are popularly called “carrion” will do.

Wash the collected apples thoroughly. There is no need to peel them, just cut out the cores and “tails”, and then cut them into small pieces. Measure the resulting mass of apples on a scale, place it in an enamel pan, add sugar at the rate of 2 tablespoons per 1 kg of apple mass. Top the apples with hot water (temperature about 70 degrees) so that its level rises 3-4 cm above the apples. The pan should be placed in a warm place, but under no circumstances on the stove or in direct sunlight. There is no need to cover it with a lid. The fermentation process will take several days. You need to stir the contents at least twice a day. After two weeks, it is necessary to drain all the liquid from the pan into clean glass jars, after straining it through 2-3 layers of gauze. The jars need to be filled not to the very brim, but so that about 5-7 cm is left free at the top. Fermentation will still continue, and it needs “free space”. Keep track of the time - another couple of weeks will pass, and the apple cider vinegar prepared according to this recipe will be able to be used for its intended purpose.

Apple cider vinegar is prepared from whole fruits of sweet apple varieties. Thanks to this, it does not contain acetic acid, which is dangerous for the body, but contains malic acid in sufficient quantities, which has valuable and beneficial properties. This wonderful organic acid supports normal digestion, representing an important building element that interacts in the human body with minerals and alkalis, capable of forming glycogen - a kind of energy reserve. In addition to acid, apple cider vinegar contains flavonoids, some trace elements and vitamins.
It takes a long time to make apple cider vinegar from finely chopped apples at home, but you still manage to get a natural product of the highest quality.

You can use industrially produced vinegar, but keep in mind that it is prepared from the cores and skins of apple fruits, which leads to a slight decrease in the quality of the product.

Natural apple cider vinegar can be distinguished from synthetic apple cider vinegar by several characteristics. It has an ABV of 4-5%, while synthetic is usually 9%.
Natural apple cider vinegar purchased at the store comes with a label that reads: “Ingredients: Apple Cider Vinegar.” On the label of a product of synthetic origin you can read: “composition: acetic acid 9%, flavoring, coloring.”
The price of natural apple cider vinegar is more than 2 times higher than the price of synthetic cider vinegar.

It is also impossible not to take into account contraindications to the use of apple cider vinegar. Despite all the usefulness and safety of this remedy, it is not recommended for patients with metabolic disorders of uric acid salts.
Also, if the patient has a gastric ulcer and duodenal ulcer, gastritis (in a hypersecretory form), chronic or acute hepatitis, chronic and acute nephritis, urolithiasis, nephrosis, treatment with vinegar is contraindicated.

There are many recipes for using apple cider vinegar as a magical elixir to cure diseases, as a means for weight loss or as a cosmetic product... but this is the topic of other articles.

The main thing is that I drew your attention to such a valuable product as apple cider vinegar, which will help you maintain health and beauty using the simplest and cheapest means.

The use of apple cider vinegar in folk medicine

Skin rash

Undoubtedly, impetigo is the most “contagious” disease in the world. It is transmitted through hands (with one touch) or a towel. It usually begins with the appearance of a red or pimply spot no larger than a pea. The rash often appears on the cheeks or near the nose and can sometimes be mistaken for a fever rash. Soon the rash begins to enlarge, forming blisters, their contents leak out, and the disease spreads to other parts of the body. Ultimately, the rash dries out, forming a yellowish crust that easily falls off.

Impetigo is a staphylococcal or streptococcal skin infection. A person is susceptible to this disease at any age, but children are especially predisposed to it. If a person who has this disease touches the diseased skin with his hands, he will constantly become infected. With careful handling of the affected areas of the skin, impetigo can be cured in 2 weeks.

Dip your finger in undiluted apple cider vinegar and apply it to the skin lesions 6 times a day.

Day, from morning to evening. In this case, impetigo disappears after 2-4 days.

A rash can also appear as a result of an allergic skin reaction to animal hair, house dust, certain artificial fabrics, insecticides, medications, pollen and certain foods.

In this case, take 1-2 glasses of regular apple cider vinegar solution daily. Rinse the affected areas once a day with a solution of apple cider vinegar (2 tablespoons of apple cider vinegar + 1 tablespoon of water). It is good to take a general bath, to which you add 0.5 liters of apple cider vinegar.

Traditional medicine believes that when swallowing, the solution washes the back wall of the throat, which the solution does not reach when gargling. As the pain in the throat decreases, the interval between rinses can be increased to two hours.

Sore throat

We are talking about treating the throat with vinegar for mild pain. If the pain is severe and there is a high temperature (streptococcal tonsillitis, scarlet fever, diphtheria), then you should consult a doctor.

Take 1 teaspoon of apple cider vinegar in 1/2 cup of warm water. Rinse effectively (a mouthful of solution) every hour. After rinsing, take a mouthful of solution twice, rinse thoroughly.

Shield your throat and then swallow this solution. The procedure can be repeated at night if you feel pain. The next day, if the pain has subsided, you should rinse only after eating.

The mucous membrane of the throat becomes inflamed, which is expressed in a hoarse voice, cough and sore throat. The reasons for this are colds, inhalation of smoky, cold, dusty air; screaming, loud talking or singing, excessive smoking.

It is recommended to add 1 teaspoon of apple cider vinegar and 1-2 teaspoons of honey to 1/2 glass of water and drink this mixture up to 7 times a day. As a result, swelling of the throat is relieved, expectoration increases and the disease calms down. During the treatment period, you should try to talk less and ventilate the apartment more often. In case of fever, it is better to stay in bed for 2-3 days.

In the case of inflammation, it can vary from mild, with a small number of scabs in all stages, to noticeable redness with some swelling of the tissue and inflammatory discs protruding above the level of normal skin, dotted with small holes, from which pus oozes when pressed. The glands adjacent to the areas affected by trichophytosis may enlarge. Ringworm plaques can be single or complex and numerous. More often they appear on the back of the head and in any hairy area of the body.

Boys are affected 6-9 times more often than girls. The causative agent of the fungal disease is transmitted through direct contact of children, as well as from cats and dogs. Probably the main source of spread is the belongings of sick people, hats, the upper part of folding upholstered seats in theaters and transport.

It is also called hay fever. The disease is associated with human hypersensitivity to pollen from flowers of various plants. It appears most often in the spring, and sometimes also in the fall. Allergic rhinitis occurs with all the signs of a normal runny nose: continuous watery discharge from the nose, hoarseness, irritated watery eyes, headache and, in the worst cases, fever and night attacks of suffocation.

2 weeks before the start of the allergic period and before its end, you should drink a glass of a regular solution of apple cider vinegar plus 1-2 teaspoons of honey in the morning and evening. This has a decongestant, anti-allergic effect on the nasopharynx and reduces its irritation.

When steam begins to rise from its surface, tilt your head over the basin and hold it until the steam is more or less strong. Inhale the vapors 75 times. Usually after this the headache stops.
