chapter: Lavash rolls

Lavash is a yeast-free Armenian bread that goes well with almost all foods. With a little imagination, you can make various rolls, pies and other delicacies from it. In today's publication we will figure out how and what to cook from thin pita bread.

Thin Armenian flatbread will be an excellent alternative to unleavened dough. It makes incredible pies, main courses, sweet and snack rolls. It combines well with almost any ingredients and all kinds of sauces, so it is often used by experienced chefs who are not afraid of culinary experiments.

Those who want to know what dishes can be prepared from thin pita bread will be interested in the fact that the simplest and most popular option is a roll stuffed with various fillings. Most often, chicken, cucumbers, salmon, cottage cheese, cheese, mushrooms, sausage, crab sticks, ground meat and boiled eggs are used as fillings. To give it the desired consistency and special aroma, mayonnaise, garlic and dried herbs are added. In addition, thin Armenian lavash is used to make extraordinary pies, strudels and even lasagna.

In order for the finished product to please you with its appearance and excellent taste, you need to know a few simple but very important nuances. Lavash, which is part of cold appetizers, can become very soggy and look like raw dough. To avoid such a problem, you should not lubricate it with too thin a sauce. For impregnation, it is more advisable to use processed cheese mixed with a small amount of mayonnaise.

It is also not recommended to add a lot of fatty meat and butter to cold pita bread snacks. It is better to replace these components with lean fish or chicken breast. If the cake has dried out and begun to crumble, it is advisable to lightly sprinkle it with clean water and briefly place it in a plastic bag. You can soften pita bread just as effectively by holding it over a pan filled with boiling liquid. The resulting steam will quickly return the cake to its original freshness. But it is important to remember that the product reanimated in this way cannot be stored further. It must be used as soon as possible, otherwise it will disappear.

Apple strudel

Having figured out what components are needed for strudel, you need to understand how to cook it at home. Thin pita bread is laid out on a flat surface and greased with soft butter. Then pieces of apples, previously fried with ground cinnamon and one and a half tablespoons of sugar, are distributed on it. The whole thing is covered with a layer of nuts mixed with an egg beaten with the rest of the sweet sand and rolled up. The future strudel is placed on a baking sheet lined with parchment and placed in a hot oven. Bake it at 180 degrees for a quarter of an hour.

We are all familiar with lavash dishes. At least, if you didn’t eat them, you saw, for example, shawarma. And they probably bought it to try in a store. After all, how convenient it is, if necessary, to quickly organize a small snack: throw a flatbread on the table, grease it with mayonnaise, ketchup, put in a few pieces of some meat or vegetables, wrap it up - and that’s it, you can eat! So we will now look at how dishes from thin pita bread are prepared. Yes, and we’ll find out how to make it yourself. It's very simple!

Preparing thin lavash

You won't find a simpler recipe anywhere. From water, flour and salt, you can make gorgeous flatbreads in just a few minutes. For seven medium-sized pita breads we will need: 300 grams of flour, 150-170 ml of boiled, slightly cooled water and half a teaspoon of salt.

To prepare dishes from thin pita bread, you first need to make it yourself. This is done as follows. Pour the flour into a bowl and make a well in it. Dissolve salt in hot water and gradually pour into flour. Mix with a mixer until all the flour has dissolved. Then put the dough on the table and knead. In two or three minutes you will get a “bun”, which we put under the film and leave for half an hour until it becomes smooth and soft.

Then we divide the dough into seven parts and roll each piece into a flat cake with a maximum thickness of two millimeters and a size slightly larger than a frying pan. Very important - fry in a dry frying pan, without oil! Heat it over medium heat. You need to get the right temperature correctly for the product to be of high quality, but over time you will learn how to do it. If you guessed right, then after 30 seconds the pita bread will begin to grow and bubble. So we fry everything. Place the first one on a damp towel, then further, layering all the cakes. When we finish frying the last one, the first one can already be rolled. That's all, now it's time to prepare delicious dishes from thin pita bread!

general information

We know many recipes for pies made from yeast dough. But not so long ago, culinary specialists, considering what dishes could be prepared from thin pita bread, realized that they could also make pies from them. What are they good for? Because they require very little effort. Buy several pita breads and place the filling between them. That's all, and they taste no worse than yeast ones!

The fillings can be any - to your taste - both salty and sweet. But it is recommended to give preference to those products that have already undergone heat treatment, for example, vegetables and stewed meat, or those that do not need it - berries and cottage cheese. If you need to soften the lavash sheets, then use a mixture of eggs with kefir or sour cream. This mixture can also be used to bind layers of a pie.

Recipe for the very first lavash pie

For the first time such a recipe became available to the public in 2000. It was very successful and quickly spread to all culinary schools in the world. If you are going to cook dishes from thin pita bread, start with it. The finished product is very similar to what is sold at metro stations and is called “khachapuri”. You will need the following ingredients: three or four pieces of pita bread, two eggs, half a liter of kefir, one hundred grams of grated cheese (can be replaced with a mixture of feta cheese and cottage cheese) and margarine. The recipe is very simple.

Spread the mold with margarine, place a couple of sheets of pita bread in it, so that their edges hang down and can be used to cover the filling. The rest of the cakes are torn into pieces, dipped in a mixture of eggs and kefir, squeezed out a little and thrown into the mold. Sprinkle everything with cottage cheese with feta cheese or cheese, cover with the edges of pita bread, pour the remaining kefir on top and put pieces of margarine. Place in the oven for 20 minutes. The result is a dish with super taste!

Salty lavash pies

We recommend preparing other dishes from thin lavash. There are a wide variety of recipes, we will consider some of them. First, a little about the formation of fillings. When preparing salty pies, vegetable, meat, cheese, cereal, egg fillings, as well as mixtures of the above, are used.

Garlic and salt, fresh or dried herbs, and pepper are added to the sauce to taste. Sometimes the filling turns out crumbly and dry. In this case, the sauce can be mixed immediately with it. And if there is no such need, for example, in the case of stewed vegetables, then we grease the lavash sheets themselves.

Sweet pies made from lavash

Sweet dishes made from thin lavash are filled with cottage cheese, dried fruits, various types of jam, berries and fruits. The simplest dish of this kind consists of pita bread, which is greased with standard sauce and granulated sugar is added.

There is a recipe for sweets made from flatbreads. In this case, you need to put several sheets of pita bread into the mold, as in one of the previous cases - so that the edges hang down, more authentically. A cavity is formed, which we fill with filling and then pour in with sauce. Of course, the edges are folded up at the top.

Let's collect it and bake it

The assembly of such a dish from Armenian thin lavash is done in layers: first we put the lavash, then a layer of filling, and so on. In the case when our filling is dry, each pita bread must first be greased with a sauce made from eggs and sour cream. When the filling layer is heavy and thick, you need to put two pita breads together. This will prevent the cake from tearing. You can assemble such a dish either in the form or directly on the table. It is preferable to assemble it in a mold, since you can place the flatbreads and filling at random, there will be room for an air gap, and this will allow the dish to bake better.

It is advisable to place baking paper on the bottom of the mold, but you can simply grease it with vegetable oil. When assembling on the table, each flatbread must be folded into an envelope so that the filling does not spread.

How to bake the assembled pie? In the case when ready-made filling is used, which does not require special heat treatment, bake the pie until browned, at a temperature of 180-200 degrees. If the filling is raw, then cover the pie with foil and bake for 30 minutes to one hour at a temperature of 220 degrees. Before turning off the oven, remove the foil and brown the top a little.

Prepare lavash stuffed with salmon and cheese

Let's continue preparing dishes from thin lavash. Recipes with photos will help us with this. We will fill this lavash with a real holiday filling, in which delicate sausage cheese goes very well with lightly salted salmon, and crispy lettuce and green onions will give the dish unsurpassed freshness.

You can salt the fish yourself or use store-bought fish, it doesn’t matter. Ingredients for the roll: one thin pita bread, 100 grams of salmon, several feathers of green onions, five to six green lettuce leaves, 100 grams of sausage cheese, 50 grams of mayonnaise.

Stuffing lavash with salmon and cheese

We will fill the dish with thin lavash. Photos will popularly tell about this process. Unroll the pita bread on the table and spread it thoroughly with mayonnaise. If you bought an oval pita bread, cut it around the edges to make a rectangle or square. This way all the rolls will be neat and of the same thickness. Cut the lightly salted salmon into thin slices, and grate the sausage cheese on a fine or medium grater. We will chop the green onions as small as possible. Now the task ahead is not very easy - you need to evenly distribute the sausage cheese over the flatbread. You have to try hard here!

Place salmon pieces on top, then pieces of lettuce and green onions. We roll our flat structure into a roll, as tightly as possible. Then we pack it in cling film and put it in the refrigerator for at least one hour. We take it out and cut it into four-centimeter portions. The food is ready, serve it to the table. In a similar way, you can prepare many other dishes with different fillings, which outwardly resemble the well-known shawarma.

Option for a thin lavash dish in a slow cooker

Now we’ll tell you how to cook it in a slow cooker. This dish is another option for savory and pita bread. It is not at all difficult to prepare, and then you can take it with you outdoors or serve it for dinner with a vegetable salad.

Required ingredients: two or three sheets of thin pita bread, 0.5 kg of minced meat, one medium-sized carrot, one onion, green onion, 250-300 ml of kefir, one egg, 200 grams of hard cheese.

Cooking a pie in a slow cooker

Now we’ll tell you, using this pie as an example, how to make it from thin lavash. We take minced chicken made from the whole chicken (approximately 550-600 grams). Fry it in a frying pan, along with carrots and onions, pre-processed as required (peeled, chopped, grated, whatever is due). Pepper a little, sprinkle with spices and salt. Since the cheese is also salty, try not to overdo it. Let the minced meat cool, and then mix it with pre-grated cheese and finely chopped green onions. Here it is, completely ready.

Grease the multicooker bowl with a little oil. Cover it with lavash. We spread exactly half of our minced meat on it. Now take pieces of another flatbread, soak them in the eggs and kefir mixture and place them on top of the minced meat. Here you need to have a supply of kefir and eggs, since it can easily take two glasses.

The next step is to spread the remaining minced meat onto the crumpled pieces of pita bread. If they are still left, then place them on the twisted meat. Then we pack the pie with the edges of the hanging cake.

At the end of the process, fill everything with the remaining kefir. If there is none or almost none left, you can add melted butter. It's time to bake our dish in a slow cooker. We do this for an hour. You can turn it over and brown the other side. If you use the oven for baking, then 25 minutes is enough. We take it out and, voila, the meat pie with pita bread is ready! Bon appetit!

Thin pita bread, it would seem, what is it for? Eat it as a snack? Yes, somehow it’s not very filling. Then why?

You can prepare delicious cold and hot snacks from it. So, for example, you can prepare the well-known Jewish salad (processed cheese, mayonnaise, garlic), apply a layer of salad on pita bread and roll it into a roll. The appetizer should be placed in the refrigerator so that the pita bread is soaked.

In the same way, you can make a roll from a salad of crab sticks, cutting it very finely, from liver pate, etc.

Lavash can be used as pancakes. As a filling, you can use grated cheese with finely chopped garlic, mashed potatoes, or prepared minced meat. Then the pancakes can be fried in butter, or generously greased with butter and baked in the oven. Try it, you will really like it!
