Lemon - 1 pc.

Olive oil - 4 tbsp.

Black pepper

Cooking method:

1. Wash, dry and fillet thawed hake carcasses. Four small fish will yield 4 servings of delicious food.

Required kitchen utensils: knife, baking dish with lid, cutting board, plates.

How to choose good hake fish in the store?

  • The likelihood of buying fresh fish is higher in large supermarkets, where many people shop and products, including fish, are quickly sold out.
  • Other fish may be sold under the guise of hake, so pay attention to the color (hake has silvery sides and a darker back), as well as the scales - they should be small and dense. For this reason, hake fillets are sold with the skin on, as otherwise the piece will simply fall apart. White fillets should not have yellow or gray tints.
  • Choose dry frozen hake, otherwise you will pay a lot for a thick layer of ice.
  • Use only whole fillets to reduce the risk of them being re-frozen.
  • The length of the fish should be no more than 30 centimeters.

Industrial fishing for hake exceeds 1.5 million tons per year, which in itself speaks of the incredible popularity of this fish on the menus of various nations. The reason for this demand is the tender white meat, tasty, slightly fatty, easily separated from the bones and in excellent harmony with most seasonings and side dishes. Fish is rich in vitamins and minerals, contains amino acids not synthesized by the human body, and its calorie content is only 85 kcal per 100 g of product. Cooking hake in the oven will preserve all its beneficial qualities, and make the dish juicy, tasty and aromatic.

It will allow you to emphasize the taste of fish, make it unique and not lose it in the mixture of many other tastes and aromas. The cooking method, which has existed for over a hundred years and is traditional in many European countries, includes the following ingredients:

The fillet is thawed and divided into 4-10 parts depending on preferences in the appearance of the dish. Rub the meat with salt and pepper, sprinkle with lemon juice and leave for 15-20 minutes. During this time, prepare the sauce by mixing sour cream, garlic gruel, cloves, basil, and herbs. The fish, lightly marinated in lemon juice, is placed in a greased baking dish and poured with sour cream sauce.

The hake is baked in an oven heated to 170-190 degrees. Cooking time is 30-35 minutes. It is best served warm, garnished with a sprig of fresh herbs.

As a complement to the dish, the cuisine of various European countries offers olives, cheese and even shrimp, and white wine is the main drink.

Hake with vegetables

Onions are cut into half rings, carrots and tomatoes into rings. Pre-prepared carcasses are rubbed with a mixture of salt, spices and sugar, several half rings of lemon are placed inside each, and then laid out on a bed of onions and carrots. The fish is carefully covered with tomato rings, and grated cheese is sprinkled on top. You can decorate the dish with several sprigs of fresh herbs. Then the sleeve is tightly sealed and several holes are made in it to allow steam to escape.

Hake with vegetables is baked at high temperature - 210-230 degrees.

It is better to put it in the oven, preheated to 150-180 degrees, after which the temperature should be increased. Approximate cooking time is 50-55 minutes.

Under the omelette

An unusual way of preparing hake, which originated in the south of France, is to bake the fish in pots. It is simple and not demanding on ingredients, including:

First, it is worth noting that for this dish, in addition to hake, pollock or cod are quite suitable. The fillet can be cleaned completely, or the bones can be removed, leaving the skin. The meat is cut into diamond-shaped pieces, covered with salt and spices, rolled in flour and fried in a frying pan greased with vegetable oil until a light golden brown crust forms. Then the chopped onion is fried and placed on top of the fillet. Beat eggs into a separate container, add salt, add milk and beat with a mixer until light foam forms. The resulting mixture is poured into the pots.

The dish is baked in an oven preheated to 180-200 degrees. Cooking time is not standardized due to too large differences in the types and sizes of possible baking containers - you should focus on the condition of the dish. As soon as the omelette has set, you can turn off the heat and leave the pots to “simmer” in a warm oven for another 3-5 minutes. The finished dish can be sprinkled with grated cheese and decorated with sprigs of herbs.

In addition to the described methods, the peoples of the world have many ways of preparing hake in the oven. For example, in Spain it is baked in foil with pepper and served with olives and shrimp. The Germans give preference, the Bulgarians - tomatoes and spicy seasonings. But the Chileans have gone the furthest - they bake a full-fledged kebab from hake meat, previously marinated in spicy mixtures. Whatever type of preparation you choose, the result will undoubtedly please you with both its taste and undeniable benefits for the body.

Please note that in order for the hake meat dish to be juicy, it should be baked in the oven for no more than 25 minutes. In this regard, products added to a dish should require a little cooking time. Hake, like cod, is baked in the oven with cheese, vegetables, sour cream and other sauces. Compared to cod, hake has fattier meat. When baking it in the oven with potatoes, it is advisable to place the tubers cut into thin plastics under the fish so that the flowing juice soaks the potatoes.

Hake, along with blue whiting and pollock, has always been considered a cheap fish. However, the cost does not always indicate the usefulness of the fish and its taste. Hake meat has a very delicate taste. In addition, it is quite juicy and has a small number of bones. Hence the conclusion: hake is an excellent product for preparing a delicious family dinner. The best way to prepare hake is to bake it in the oven. In this case, the dishes turn out incredibly tasty, and most of the beneficial substances remain in their places, benefiting the human body.
