Figured donuts made from choux pastry, also called French donuts, are a light and tasty dish, and also very beautiful. They are not difficult to make, but there are some tricks. You will need a pastry bag with a rose tip and parchment paper for baking.

Ingredients: milk (soy or cow) - 125 g, water - 125 g, butter - 60 g, flour - 150 g, eggs - 4 pcs., a pinch of salt; for glaze: powdered sugar - 150 gr., lemon juice and water - 1 tbsp each.

Let's get started.
Heat water in a saucepan, add soy milk, butter, salt and bring to a boil.
When everything has dissolved, stirring and adding flour in a thin stream. Mix vigorously. As soon as the dough begins to stick to the surface, turn it off and wait until it cools completely.
Add eggs to the cooled mixture, one at a time, mixing thoroughly each time. The dough should be homogeneous. That's it, the dough is ready.
Let's move on to the most difficult part of the process: you need to cut the parchment into squares of 15 by 15 cm. Did it work?
Let the frying oil heat up to 180 degrees.

Transfer the dough into a pastry bag and place onto squares of parchment paper. Place the paper directly into hot oil. Don't worry, the parchment will come off in a minute (see video).

Place the finished donuts on paper napkins to remove excess fat.
Let's make the icing: powdered sugar needs to be thoroughly mixed with water and lemon juice. Water the donuts.

The dough is made as for ordinary custard cakes. According to the recipe, you need to add grated lemon or orange zest, I refused this, because mine don’t like all sorts of spices in the dough, even cinnamon.

If necessary, I periodically reduce the heat, then increase the heat again so that the donuts are fried evenly. To prevent a crust from forming on the dough, I cover the saucepan with a lid.


For sweetness, I generously sprinkle the finished donuts with powdered sugar.

Pour vegetable oil into a deep frying pan or saucepan and heat it thoroughly. Having put a nozzle with a larger hole on a pastry bag, we place several strips directly into the boiling oil, trying to give them some shape (circle, oval, loop, spiral). Cut the dough from the attachment using a moistened sharp knife.


Deep fry on all sides for literally 2-3 minutes until golden brown.


Pry the fried donuts with a fork and remove them from the oil, place them on a plate lined with napkins or a paper towel to remove excess oil.


Place the slightly cooled Churros donuts on a plate, sprinkle with powdered sugar and serve with tea for breakfast.
