The secret of juiciness

The recipe has been chosen, the ingredients have been prepared, but how can you get the perfect result the first time? There's a little secret here. The right amount of filling is the key to delicious pies. The sorrel layer must be thick, then the baked goods will be juicy. Real jam!

Tip: do not forget that during heat treatment the volume of sorrel is greatly reduced. Therefore, it is almost impossible to overdo it with the amount of greens. On the contrary, the more of it, the tastier the result will be - pies with sorrel will simply melt in your mouth!

Just don’t think that sorrel pies can only be baked in the summer. Nothing like this. Firstly, sorrel grows excellently in home beds on the windowsill. And secondly, out of season, you can always buy fresh sorrel in the supermarket. After all, the main thing is to make the filling tasty, and it doesn’t matter whether sorrel is grown in summer or in winter. I describe my cooking option step by step and post it here, accompanied by a photo.

You need to prepare yeast. Store-bought dough is also suitable, but in our store it is often unsalted and unsweetened, so I like to bake with mine. When the dough has risen, you need to knead it, but so that it remains soft and does not stick to your hands.

Roll it into a short “sausage”, cut into “slices” and knead them into flat cakes.

Now, the cakes need to stand, rise, and become more fluffy, so we cover them with linen and leave them for half an hour.

During this half hour, you need to have time to prepare the sorrel filling: wash the leaves, chop them, sprinkle with sugar to taste and thoroughly rinse the sorrel in a bowl. When you start preparing the filling, you need to remember that homemade sorrel is more sour than garden-grown sorrel.

When the filling is ready, place a tablespoon of sweet sorrel on each flatbread.

Pinching. I usually pinch it with a “rib”, as in the photo.

Then, I bend the tuck to the pie and place it on a baking sheet with the tuck down.

Each pie must be pierced with a fork or one small hole made in the top of the pie - this is for steam to escape. In an oven preheated to 180 degrees, place the baking sheet on the middle shelf. Bake until the dough is ready, which we check with a toothpick.

We take out the sweet pies with sorrel, place them on a sheet of paper, cover with a towel, and let cool slightly. Pies are served at the tea table.
